With the Thermomix® you can conjure up minestrone in no time at all. In just 30 minutes, the soup is steaming on the table and you can treat yourself and your family to a delicious and healthy dish.

The minestrone is vegetarian and therefore ideal for anyone who wants a meat-free diet. You can also easily refine them with chicken or beef breast.

The recipe can be varied and you can use different vegetables depending on the season and your taste. Try it with broccoli, cauliflower or mushrooms!

In my simple recipe, with easy-to-understand step-by-step instructions, I show you how to make this absolutely delicious minestrone at home in just a few simple steps.

What ingredients do you need for minestrone?

  • 1 onion
  • 1 garlic clove
  • 20 g extra virgin olive oil
  • 1 carrot
  • 2 stalks of celery
  • 1 medium-sized potato
  • 1 zucchini
  • 2-3 tsp vegetable stock
  • 1 teaspoon oregano
  • approx. 750 ml water
  • 400 g chopped tomatoes from the tin
  • 50 g tomato puree
  • 100 g small shell pasta
  • 1 small jar of white beans (drained weight 255 g)
  • 2 slices of bacon (optional)
  • Salt and pepper

To garnish:

  • Fresh herbs
  • Chili flakes
  • Grated parmesan

How do you make minestrone?

Preparations:

The first step is to chop the vegetables.

To do this, peel and quarter the onion and peel and halve the garlic clove.

Then peel the carrot and potato and cut into small cubes.

Dice the zucchinis too.

Peel the celery and cut into thin slices.

Put the beans in a sieve, rinse under running water and set aside.

Preparation:

Now add the onion and garlic to the mixing bowl first and 3 sec. / Chop level 6.

Push everything down with the spatula and repeat the process.

Add the olive oil and, without the measuring cup 3 min. / 100 °C / level 1 steam.

Then add the remaining vegetables, i.e. carrot, celery, potato, zucchini, tinned tomatoes, tomato puree, vegetable stock, oregano and water, and stir to combine. 15 min. / 100 °C /left-handed/speed 1 cooking.

Place the simmering basket on the lid of the mixing bowl instead of the lid to avoid splashing.

It is important that the MAX line is not exceeded!

Once the time has elapsed, add the pasta (stir in roughly with a spoon) and cook for a few more minutes. 12 min. / 100 °C / counterclockwise rotation / level 1 cooking.

In the meantime, fry the bacon in a hot pan until crispy and cut into pieces. (This step is optional, you can also omit the bacon).

Finally, add the beans and the fried bacon and 1 min. / 100 °C / anticlockwise rotation / level 1 stir in.

Season to taste with salt and pepper and sprinkle with fresh herbs and grated Parmesan cheese. Serve warm.

Notes

  • Minestrone is a thick Italian vegetable soup. It can be served as a soup or stew, depending on how thick you want it to be.
  • This recipe is more of a stew than a soup.
  • If you want your minestrone to be thinner, you can add more water.
  • However, make sure that you do not exceed the MAX line in the mixing bowl.
  • Minestrone thickens over time as the starch from the vegetables, beans, and pasta in the soup absorbs the liquid.
  • When reheating the minestrone, it can be diluted by adding water or stock.
