How to Make Oven-Roasted Tomato Sauce
Instructions:
Start by preheating your oven to 425°F (220°C) and lightly brushing a baking sheet with olive oil.
Wash the tomatoes, pat them dry, and cut them in half (or quarter them if they’re on the larger side). Be sure to cut out the core and stems.
Place the tomatoes cut-side up on the baking sheet.
Season with salt and pepper, then sprinkle with brown sugar.
Next, peel and quarter the onion, and peel the garlic cloves.
Pick the basil leaves off the stems and add everything to the mixing bowl. Chop 5 sec / speed 5.
Scrape down the sides of the bowl with a spatula and chop again for 2 sec / speed 5. Add the olive oil and mix 10 sec / speed 3.
Spoon the herb-oil mixture evenly over the tomatoes.
Finally, top with the fresh thyme sprigs.
Place the baking sheet on an oven rack and roast for about 1 hour, until the tomatoes start to turn golden and caramelize around the edges.
Discard the thyme sprigs, then transfer the tomatoes along with all their juices into the mixing bowl.
Purée 40 sec / speed 8, then finish cooking for 10 min / 100°C (212°F) / speed 2.
