Whether you use it as a sauce for pasta, a base for pizza, or a flavorful topping for veggies, this oven-roasted tomato sauce is super versatile and so delicious! :-)
First, preheat your oven to 220 °C conventional heat and lightly brush a baking sheet with oil.
1,2 kg ripe tomatoes
Wash and pat the tomatoes dry. Cut them in half (or quarters if they're on the larger side) and cut out the core. Arrange the tomatoes cut-side up on your baking sheet.
1 tsp salt, ½ tsp black pepper, 1 tsp brown sugar
Season generously with salt, pepper, and a sprinkle of brown sugar.
Next, peel and quarter the onion, and peel the garlic cloves. Pluck the basil leaves from the stems and pop everything into the mixing bowl. Chop 5 sec / speed 5. Scrape down the sides of the bowl with the spatula and chop again for 2 sec / speed 5. Add the olive oil and mix for 10 sec / speed 3.
Spoon the herb-and-oil mixture evenly over the tomatoes.

Finally, lay the thyme sprigs right on top.
Pop the baking sheet into the oven and roast for about 1 hour, until the tomatoes start to get a lovely roast on them.
Remove and discard the thyme sprigs, then transfer the tomatoes along with all those delicious juices into the mixing bowl. Purée 40 sec / speed 8, then cook for 10 min / 100 °C / speed 2 to finish it off.
