My Best Tips for Pancake Success

Sift the flour: This simple step keeps your batter smooth and completely lump-free.

Let the batter rest: Just resting it for a few minutes works magic for extra fluffy pancakes.

Preheat your skillet well: A hot pan gives you those gorgeous, golden, slightly crispy edges.

Use enough butter or oil: Nobody likes pancakes stuck to the pan!

Cook over medium heat: This ensures they cook through and brown evenly without burning.

Flip with care: Wait until tiny bubbles pop on the surface before gently flipping so they stay perfectly intact.

Keep them warm: Pop cooked pancakes on a baking sheet in a low oven while you finish the rest of the batch.

Get creative with toppings: Anything goes—from fresh berries and maple syrup to chocolate chips or even savory add-ins!

Make the batter the night before: Perfect for saving precious time on busy mornings.

Can You Make These Ahead or Store Leftovers?

Once cooked, you can keep the pancakes warm for a little while, but try not to leave them out for longer than 30 minutes.

I don’t recommend freezing these, as the texture won’t hold up as well.

Fun Recipe Variations

Chocolate Pancakes: Mix cocoa powder or chocolate chips right into the batter.

Banana Pancakes: Fold mashed bananas into the batter.

Cheesy Pancakes: Stir shredded cheese into the batter.

Savory Pancakes: Season the batter with fresh herbs and serve with fried eggs and crisp bacon.

Gluten-Free Pancakes: Swap in your favorite gluten-free flour blend.

How to Make These Pancakes

Instructions:

First, add the eggs and yogurt into the mixing bowl.

Next, whisk together the dry ingredients (flour, baking powder, and sugar) and add them to the bowl.

Mix for 20 sec / Speed 5, scrape down the sides of the bowl with a spatula, and mix again for 3 sec / Speed 5.

Transfer the batter to a bowl and let it rest for about 15 minutes.

Heat a skillet over high heat, then turn it down to medium and add a splash of oil.

Spoon a tablespoon of batter into the skillet for each pancake and cook for 1–2 minutes (cook times will vary a bit depending on your skillet and heat level).

Once little bubbles start forming on the surface, flip the pancake with a spatula and cook for another minute or so until golden brown.

Repeat with the remaining batter.

Stack the pancakes high on a plate and serve warm with all your favorite toppings.

Enjoy!

By the way, the prep times listed are just averages. Everyone cooks at their own pace, and sometimes things take a bit longer or shorter than expected.
