How to Make These Pancakes
Instructions:
First, add the eggs and yogurt into the mixing bowl.
Next, whisk together the dry ingredients (flour, baking powder, and sugar) and add them to the bowl.
Mix for 20 sec / Speed 5, scrape down the sides of the bowl with a spatula, and mix again for 3 sec / Speed 5.
Transfer the batter to a bowl and let it rest for about 15 minutes.
Heat a skillet over high heat, then turn it down to medium and add a splash of oil.
Spoon a tablespoon of batter into the skillet for each pancake and cook for 1–2 minutes (cook times will vary a bit depending on your skillet and heat level).
Once little bubbles start forming on the surface, flip the pancake with a spatula and cook for another minute or so until golden brown.
Repeat with the remaining batter.
Stack the pancakes high on a plate and serve warm with all your favorite toppings.
