How to Make Oven-Baked Kaiserschmarrn

Prep Work:

Preheat your oven to 400°F (200°C) and place your baking dish inside so it gets nice and hot while the oven preheats.

Instructions:

First, insert the butterfly whisk into your mixing bowl.

Separate the eggs, then add the egg whites and a pinch of salt to the mixing bowl. Whip for 5 min / Speed 3 without the measuring cup until stiff peaks form. Remove the butterfly whisk and transfer the whipped egg whites to a separate bowl.

(No need to wash the mixing bowl before moving on to the next step!)

Next, add the milk, egg yolks, sugar, vanilla sugar, and flour to the mixing bowl and mix for 30 sec / Speed 4 until you have a smooth batter.

Pour the batter into the bowl with your egg whites, then gently fold everything together using a spatula.

Carefully take the hot baking dish out of the oven, add the butter, and let it melt. Swirl it around so the entire bottom of the dish is evenly coated.

Pour the batter into the hot dish and bake on the lower oven rack for 15 minutes.

Remove the dish from the oven. Use a spatula to slice the pancake into quarters and carefully flip each piece over. Bake for another 10 minutes until golden and fluffy.

Remove it from the oven again, tear it into bite-sized pieces, and dust with powdered sugar.

Pop it back into the oven for about 5 minutes.

Serve warm topped with extra powdered sugar, applesauce, and/or fresh berries.
