  • 2 tbsp crispy fried onions

How to Make Mushroom Puff Pastry Turnovers with Balsamic Caramelized Onion Sauce

Making the Filling:

Peel and quarter the onions, and peel the garlic cloves. Add both to the mixing bowl and chop for 5 sec / speed 5.

Add the butter and sauté for 3 min / 120°C (250°F) / speed 1.

Meanwhile, gently brush the mushrooms clean, trim off the stem ends, and cut them into quarters or smaller bite-sized pieces, depending on their size.

Add the mushrooms to the mixing bowl with the onions and cook, without the measuring cup in place, for 6 min / 100°C (212°F) / Reverse / Soft Stirring speed.

Toward the end of the cooking time, drop the fresh parsley and a pinch of salt through the hole in the lid.

Place the mushrooms in a colander and drain off the liquid (give them a gentle squeeze to remove any excess moisture so your puff pastry doesn’t get soggy).

Fill and Bake:

Preheat your oven to 400°F (200°C).

Remove the puff pastry sheet from the fridge, unroll it right onto the parchment paper it came with, and cut it into 4 equal rectangles.

Spoon the drained mushrooms onto the bottom half of each rectangle, then use a sharp knife to cut a few small slits in the top half for ventilation.

Fold the top half over the filling and press the edges firmly together with a fork to seal them up.

Slide the puff pastry pockets (along with the parchment paper) onto a baking sheet. Whisk an egg in a small bowl and brush it evenly over the tops for that gorgeous golden finish.

Bake for 15 to 20 minutes, until the pastry is beautifully puffed and golden brown.

While those are in the oven, whip up the sauce!

How to Make the Balsamic Crispy Onion Sauce:

For the sauce, peel and quarter the onion and peel the garlic. Place both into the mixing bowl and chop for 5 sec / Speed 5. Scrape down the sides of the bowl with a spatula.

Add the oil and sauté for 2 min / 250°F (120°C) / Speed 1.

Sprinkle the flour over the onion mixture and cook for 1 min 30 sec / 212°F (100°C) / Speed 1.

Meanwhile, clean the fresh mushrooms, trim the stems, and chop them into small pieces.

Next, add the water, heavy cream, tomato paste, balsamic vinegar, vegetable bouillon, and mushrooms. Blend for 5 sec / Speed 8, then bring to a simmer for 6 min / 212°F (100°C) / Speed 4.

Stir the French fried onions into the finished sauce for 10 sec / Reverse / Speed 2 so they retain a nice bit of crunch.

Finally, season the sauce with salt and pepper to taste, and serve warm alongside your crispy puff pastry pockets.

This pairs amazingly well with potato croquettes, roasted or mashed potatoes, dumplings, or Duchess potatoes.

Assembling and baking:

  • Preheat your oven to 200 °C (conventional top/bottom heat).

    Take the puff pastry sheet out of the fridge, unroll it onto its baking paper, and cut into 4 equal rectangles.

  • Fold the top half over the filling and crimp the edges firmly with a fork to seal them up nicely.
