How to Make Homemade Chicken Noodle Soup
Prep Work:
First, let’s prep all those fresh veggies!
Peel the carrots, trim off the ends, and chop them into rough chunks.
Slice the leek in half lengthwise with a sharp knife and rinse it thoroughly under cold water. Make sure to pull the green leaves apart slightly as you rinse—dirt and grit love to hide in there!
Give the freshly washed leek a good shake to dry, then chop it into half-moons.
Peel the celery root (or celery) and cut it into chunks as well.
Pick the parsley leaves off the stems.
Finally, pat the chicken dry with paper towels and cut it into bite-sized pieces.
Instructions:
First, set your Thermomix to Speed 5 with no time set. Drop the parsley through the lid opening onto the running blades. Transfer to a bowl and set aside.
Next, add the sliced leek and oil to the mixing bowl and sauté for 3 min / 120°C (250°F) / Reverse / Speed 1.
Add the carrots and celery, then chop for 5 sec / Speed 5. Scrape down the sides of the bowl with your spatula.
Now add the chicken stock, water, and chicken pieces. Cook for 15 min / 100°C (212°F) / Reverse / Speed 1. Place the simmering basket on top of the lid instead of the measuring cup to prevent splatters.
Add the noodles and cook for the time indicated on the noodle package at 100°C (212°F) / Reverse / Gentle Stirring Speed.
Season the soup to taste with salt and black pepper, then serve hot, sprinkled with the freshly chopped parsley.
