My Best Tips for Success

Use a blend of ground beef and ground pork for the filling—it keeps the meat super juicy and packed with flavor.

Don’t overmix the meat! Mix everything (ground meat, onion, garlic, breadcrumbs, mustard, and spices) just until combined, otherwise it can get tough.

Divide the meat mixture into equal portions (about 3.5 to 4.5 oz per roll). This ensures your rollups are uniform and bake evenly in the oven.

Use good-quality sliced deli ham. It’s tender and pliable, making it super easy to roll right around the meat filling.

Place your assembled roll-ups seam-side down (or snug at an angle) tightly together in the baking dish. This keeps them from unwrapping while they bake!

Make sure to preheat your oven well (to about 400°F). This helps everything bake faster and gives you that gorgeous, bubbly, golden-brown cheese.

The 25-minute bake time is just a general guideline. You’ll know it’s done when the cheese is melted and golden brown, and the sauce is bubbling gently around the edges.

Can I Make This Ahead of Time and Store It?

Yes, this is such a fantastic make-ahead meal! You can fully assemble the ham and beef roll-ups and keep them unbaked in the baking dish in the fridge for 1 to 2 days.

You can also whip up the sauce ahead of time and store it separately or pour it right over the roll-ups before chilling.

When you’re ready to bake the cold casserole, just add about 5 to 10 minutes to the total baking time (around 30 to 35 minutes total).

Any leftover baked casserole will stay good in the fridge, tightly covered, for 2 to 3 days. To reheat, simply pop individual portions in the microwave or warm the whole dish back up in the oven.

Freezing works like a charm, too! You can freeze the stuffed, unbaked roll-ups individually (without the sauce and cheese).

Or, freeze the fully baked dish—though it’s best to wait and sprinkle fresh cheese on top right before you reheat it.

To thaw, just let it sit overnight in the fridge, then bake in the oven until hot and bubbly.

Recipe Variations & Ideas

Switch up the ham: Swap out the cooked deli ham for thin slices of smoked ham. It adds a wonderful smoky flavor, and the ham gets nice and crispy while baking!

Add Cheese to the Filling: Mix small cubes of feta, mozzarella, or your favorite melting cheese right into the meat filling.
Sneak in Some Veggies: Sauté finely diced bell peppers or mushrooms alongside the tomato paste before adding the liquids.

Switch Up the Sauce: Not in the mood for tomato sauce? Swap it out for a rich, creamy mushroom sauce or a classic garlic cream sauce.

Fresh Herbs: Stir freshly chopped parsley, chives, or basil into the meat filling, the sauce, or both for a bright pop of fresh flavor.

Add Some Kick: Toss a pinch of smoked paprika or red pepper flakes into the sauce or filling for a little extra warmth.

Make it Vegetarian: Swap out the ground meat for a flavorful veggie filling made with lentils, black beans, or finely diced tofu.

Ingredients You’ll Need for Ham and Meat Roll-Ups

For the Meat Filling:

  • 1 yellow onion
  • 1 garlic clove
  • 14 oz (400g) ground meat (ground beef or a pork/beef blend)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 heaped tbsp breadcrumbs
  • 1 tsp mustard (yellow or Dijon)
  • 6 slices cooked deli ham

For the Sauce:

  • ¼ cup (60g) tomato paste
  • 1 tbsp cooking oil
  • ¾ cup (200g) vegetable broth
  • ⅔ cup (150g) heavy cream
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 pinch of sugar
  • 1 tbsp dried Italian seasoning
  • 1 tbsp cornstarch
  • For the topping:

    • 1 cup shredded cheese for melting (such as mozzarella or Gouda)
A plate with ham and ground meat rolls and French fries, served with a small dish of ketchup.

How to Make Ham and Ground Meat Rolls

    For the meat filling:

Peel the garlic and onion and cut them into large chunks.

Add both to the mixing bowl and chop for 5 sec / Speed 5. Scrape down the sides of the bowl with a spatula and repeat.

Next, add the ground meat, salt, pepper, breadcrumbs, and mustard.

Mix everything together for 25 sec / Dough Mode.

Divide the meat mixture into 6 equal portions.

Lay out the slices of deli ham.

Shape each portion of meat into a sausage-like log and place it in the center of a slice of ham.

Fold the long sides of the ham tightly over the meat mixture so it’s completely wrapped up.

Place the rolls seam-side down (or nestled snugly next to each other) in your baking dish. Placing them seam-side down keeps them from opening up while baking!

    For the sauce:

Give the mixing bowl a quick rinse.

Add the tomato paste and oil to the mixing bowl and sauté for 2 min / 120°C (250°F) / speed 2.

Next, add the vegetable broth, heavy cream, salt, pepper, sugar, Italian seasoning, onion powder, paprika, and cornstarch.

Mix everything together for 3 sec / speed 4, then let the sauce thicken for 7 min / 100°C (212°F) / speed 2.

    Time to bake:

Pour the sauce evenly over the ham-wrapped meat rolls in your baking dish.

Sprinkle the shredded cheese all over the top.

Bake in the preheated oven for about 25 minutes, until the cheese is melted and beautifully golden brown.

These ham-wrapped meat rolls taste amazing served alongside crisp potato wedges, mashed potatoes, rice, or your favorite pasta!

    Enjoy!
