My Top Recipe Tips
If you don’t have a Thermomix®, no problem at all! Just sauté your finely chopped onion in a splash of oil in a pot for a minute or two before adding the tomatoes and seasonings. It builds a fantastic flavor base for the sauce.
Use the simmering basket on top of your mixing bowl lid (or a splash guard on a standard pot) while the sauce simmers. This keeps those annoying tomato splatters from making a mess on your stovetop and counters.
Don’t skip that little splash of vinegar at the end! It balances out the acidity of the tomatoes and gives the sauce that signature extra pop that tastes just like the boxed original. A splash of red wine vinegar or a good balsamic works brilliantly here.
Cook your spaghetti al dente according to the package instructions so it still has a nice slight bite—it really makes all the difference!
Be sure to give the finished sauce a final taste test at the end and adjust with salt and maybe a pinch of sugar. Tomato sauces often need that little touch of sweetness depending on how ripe the tomatoes were.
Fresh basil is an absolute must! It brings that bright, fresh flavor and signature classic taste. Don’t be shy with it!
If your sauce still tastes a bit too acidic even after adding sugar, you can stir in a tiny pinch of baking soda while it simmers. Just use a tiny pinch on the tip of a knife—it neutralizes the acid right away (careful, it will foam up a little!).

Can You Make This Ahead and Store It?
This tomato sauce is fantastic for meal prep! Just make it according to the recipe and let it cool down completely.
Store it in an airtight container in the fridge, and it’ll stay fresh for a good 3 to 4 days.
When you’re ready to serve, simply reheat the sauce in a saucepan and toss it with freshly cooked spaghetti.
It also freezes like a dream! Transfer the sauce into freezer-safe containers and freeze it in individual portions.
That way, you’ll always have a quick homemade sauce ready to go!
I do recommend boiling the spaghetti fresh right before serving, though—reheating pre-mixed pasta just isn’t quite as tasty.
Fun Recipe Variations
Add some kick: Simmer with a pinch of crushed red pepper flakes for a little extra heat.
Switch up the herbs: Toss in some dried oregano or marjoram along with the fresh basil.
Veggie boost: Sauté finely diced carrots, zucchini, or bell peppers with the onions before adding the tomatoes.
Extra Flavor: Toss a lightly crushed garlic clove into the sauce while it simmers (just scoop it out before serving!).
Smoky Twist: Add a pinch of smoked paprika for a subtle depth of flavor.
Thicker Sauce: If you prefer a richer, thicker sauce, just let it simmer uncovered for a few extra minutes at the end.

Ingredients You’ll Need for Copycat Miracoli Spaghetti
- ½ onion
- 17 oz (500g) tomato puree (passata)
- 1 tbsp tomato paste
- 1 tbsp olive oil
- 1 heaping tsp celery salt
- 2 tsp dried oregano
- 1 tsp roasted garlic powder
- ½ tsp sugar
- A splash of vinegar (like white wine vinegar)
- Fresh basil
Plus:
- Spaghetti (as much as your family needs!)

How to Make Copycat Miracoli Spaghetti
Instructions:
First, peel the onion, add it to the mixing bowl, and chop for 5 sec / speed 5. Scrape down the sides of the bowl with the spatula and repeat 1–2 times until the onion is finely minced.
Add the remaining ingredients (except the vinegar and basil) to the mixing bowl.
Place the lid on top, set the simmering basket on the lid instead of the measuring cup (this prevents splatters while allowing steam to escape), and let it simmer for 10 min / 100 °C / speed 2.
Add the vinegar and quickly stir in on speed 2. (The vinegar helps balance out the acidity of the tomatoes and adds a wonderful layer of depth to the sauce. Feel free to use whichever type of vinegar you prefer!)
Meanwhile, cook the spaghetti on the stovetop according to the package directions.
Drain the cooked spaghetti, taste the sauce and add a pinch of salt if needed, then serve topped with fresh basil leaves.
Enjoy!

By the way, the prep times listed are just averages. Everyone cooks at their own pace, and sometimes things take a bit longer or shorter than expected.
Happy cooking!
