You can also whip up the crumb dough in advance, wrap it tightly in plastic wrap, and chill it in the fridge for at least 30 minutes (or even longer).

Covered tightly, the baked cake will keep at room temp or in the fridge for 2 to 3 days. Just a heads-up: chilling it in the fridge will make the crust a little firmer.

It freezes beautifully, too! You can freeze both the fully baked, cooled cake (hold off on the powdered sugar until serving!) and the unbaked crumb dough.

To serve, simply thaw the cake at room temperature or pop it in the oven briefly to warm it back up. For frozen dough, just thaw and assemble as usual!

  • 100 ml water
  • 60 g granulated sugar
  • 1 packet vanilla sugar (or 1 tsp vanilla extract)

Topping:

  • 100 g sliced almonds

How to Make Rhubarb Crumb Cake

For the Rhubarb Compote:

First, give your rhubarb a really good rinse under cool water.

Trim off the leaves and the tough bottom ends.

If you have particularly thick, stringy stalks, go ahead and peel them. Otherwise, I like to leave mine unpeeled to keep that gorgeous pinkish-red color!

Chop the rhubarb into roughly 3/4-inch pieces.

Combine the rhubarb, water, sugar, and vanilla sugar in a medium saucepan and bring everything to a boil.

Turn down the heat and let it simmer gently for about 10 minutes, until the rhubarb gets soft and tender.

Remove the saucepan from the heat and let the compote cool down.

Once cooled, pour the compote into a strainer to drain off any excess liquid so your cake crust doesn’t get soggy.

For the Almonds:

While the compote simmers, toast the sliced almonds in a dry skillet over medium heat until they’re nice and golden brown.

Stir them frequently so they don’t burn.

Remove the skillet from the heat and set the almonds aside to cool.

For the Crust & Crumble:

To make the dough, add the butter, flour, sugar, and egg to the mixing bowl.

Mix for 15 sec. / Speed 5 until crumbly dough forms.

Baking:

Preheat your oven to 375°F (190°C).

Line the bottom of your springform pan with parchment paper. Grease the sides and lightly dust them with flour.

Press 2⁄3 of the crumble mixture firmly into the bottom of the pan to form the crust, building up a small border around the edge.

Sprinkle the toasted almonds over the crust (be sure to save a few for the top!).

Spread the rhubarb compote evenly over the almond layer.

Finally, scatter the remaining crumble dough and reserved almonds over the rhubarb layer.

Bake on the lower rack for about 40 minutes, or until the top is beautifully golden brown.

To Serve:

Let the cake cool down slightly after taking it out of the oven.

Dust generously with powdered sugar.

Serve warm with a scoop of vanilla ice cream or a dollop of fresh whipped cream.

  • 100 g sliced almonds
    While the compote simmers, toast the sliced almonds in a dry skillet over medium heat until golden brown. Stir frequently so they don’t burn!
  • Remove the skillet from the heat and set the almonds aside to cool.
