That said, firm baking apples work best for cakes, crumbles, and other baked treats.
Baking apples tend to be a bit tart when eaten raw, but they unlock their rich aroma and natural sweetness as they bake.
Plus, they hold their shape in the oven instead of turning to mush or watering down your batter like regular snacking apples can.

How to Make This Apple Cake
Instructions:
First, peel, core, and quarter the apples. Make small fan-like slits across the top of each quarter.
Next, preheat your oven to 350°F (180°C) convection.
Line a springform pan with parchment paper and grease the sides.
For the batter, add the room-temperature butter, sugar, vanilla sugar, and eggs to the mixing bowl and mix for 1 min / Speed 5.
Use a spatula to scrape down the sides of the bowl.
Next, add the flour, baking powder, and milk, then mix for 3 min / Speed 4.5.
Pour the batter into your prepared springform pan and arrange the apples right on top.
Bake on the lower rack for about 25 minutes.
Brush the warm cake with warm apricot jam.
