Zubereitung
First, peel, core, and quarter the apples. Make thin, parallel cuts along the top of each quarter in a fan pattern, being careful not to cut all the way through.
Next, preheat your oven to 180°C convection.
Line the bottom of a springform pan with parchment paper and grease the sides.
To make the batter, add the room-temperature butter, sugar, vanilla sugar, and eggs to the mixing bowl and blend for 1 min / Speed 5.
Scrape down the sides of the bowl with a spatula.
Add the flour, baking powder, and milk, then mix for 3 min / Speed 4.5 until smooth.
Pour the batter into your prepared springform pan and arrange the fan-cut apple quarters gently on top.
Bake on the lower rack of the oven for about 25 minutes.
While the cake is still hot, brush the top generously with warmed apricot jam.
Once cooled, dust with powdered sugar and serve with a dollop of whipped cream, if desired!
