  • 220 ml water
  • ½ cube fresh yeast (or 2 ¼ tsp active dry yeast)
  • 1 tsp sugar
  • 360 g all-purpose flour (or bread flour)
  • 2 tbsp olive oil
  • 1 tsp salt

For the topping:

  • 1 tbsp milk
  • 1 tbsp oil
  • Sesame seeds, for sprinkling

How to Make Homemade Flatbread

Instructions:

Add the water and sugar to the mixing bowl, then crumble in the yeast. Set to 2 min / 100°F (37°C) / Speed 2.

Now add the flour, salt, and oil, and knead for 6 min / Dough Mode.

Turn off your Thermomix® and let the dough rise right inside the mixing bowl with the lid closed for 30 minutes.

Next, remove the dough from the mixing bowl, place it onto a parchment-lined baking sheet, and gently shape it into a round using lightly floured hands.

Use a dough scraper to press a pattern into the top of the dough.

Cover the flatbread with a clean kitchen towel and let it rise one more time for 20 minutes. Meanwhile, preheat your oven to 450°F.

Whisk the oil and milk together, then brush it generously all over the top of the flatbread.

Sprinkle a few sesame seeds over the top and bake on the bottom oven rack for 10–12 minutes, until beautifully golden.

Remove the flatbread from the oven and cover it immediately with a kitchen towel.

Let it cool completely while covered.

Pro Tip: Don’t skip this step! Covering the bread as it cools is the absolute secret to getting that super soft, pillowy texture.

  • Transfer the dough onto a baking sheet lined with parchment paper. Use lightly floured fingers to gently press and shape it into a round flatbread.
  • Using a dough scraper or spatula, gently press a diamond grid pattern into the top of the dough.
  • Cover the flatbread with a clean kitchen towel and let it rise for another 20 minutes. Meanwhile, preheat your oven to 230°C (top/bottom heat).
  • Whisk the milk and oil together, then brush the mixture evenly over the flatbread.
  • Sprinkle sesame seeds over the top and bake on the lower rack for 10–12 minutes, until gorgeously golden brown.
  • Remove the flatbread from the oven and immediately cover it with a kitchen towel. Let it cool completely while covered.
  • Pro Tip: Don’t skip covering it with the towel—this step traps the steam to make sure your flatbread turns out wonderfully soft and fluffy!
