Sometimes you just crave good old-fashioned comfort food, right? Classic stuffed cabbage rolls, for instance! But ugh, all that tedious rolling… who has the time? That’s why I have the ultimate shortcut recipe for you today: Lazy Cabbage Roll Casserole!

Everything gets layered right into a baking dish, practically bakes itself in the oven, and tastes just like the traditional classic.

It’s loaded with juicy meatballs, tender cabbage, and a rich, savory sauce.

My Top Prep Tips

Chop the potatoes and sweet cabbage into bite-sized pieces so they bake up nice and tender in 60 to 70 minutes. Keep the pieces on the smaller side so everything cooks through evenly!

For the meatballs, finely chop the onion and mix it thoroughly with the ground meat, egg, breadcrumbs, salt, and pepper (feel free to throw in your favorite meatball go-tos, too, like a squeeze of mustard or fresh chopped parsley).

Shape the mixture into about 12 equal-sized meatballs—this helps them cook evenly in the baking dish.

Layer the potatoes at the bottom of a large baking dish first, then top with the meatballs and cabbage. This allows the potatoes to simmer directly in the sauce and get ridiculously tender.

For the sauce, finely mince the veggies (onion, garlic, carrots, bell pepper). If you aren’t using a Thermomix®, just give them a super fine chop by hand or grate the carrots!

Sauté the tomato paste, oil, and chopped veggies for the sauce really well (in a pot or Thermomix). This creates an incredible flavor base and adds so much depth to the sauce.

Pour the sauce evenly over the cabbage in your baking dish so everything is nice and coated—this helps it get super tender in the oven.

Make sure to cover the casserole dish tightly (using a lid or a sheet of aluminum foil!) so the cabbage and potatoes steam to perfection without drying out.

The 60-to-70-minute bake time is just a guideline. Check on it at the 60-minute mark by piercing the cabbage and potatoes with a fork. If they need a little more time, just cover it back up and pop it back in the oven.

Can You Make This Ahead and Store Leftovers?

This is an absolute dream for meal prep! You can chop all the veggies (potatoes, cabbage, and sauce aromatics), shape the meatballs, and make the sauce completely ahead of time.

You can even assemble the entire casserole (layer it up, pour over the sauce, add the bay leaves), cover it tightly, and pop it in the fridge unbaked for 1 to 2 days.

Just keep in mind that since it’ll be cold coming straight from the fridge, you’ll want to extend the bake time to around 70 to 80 minutes total.

Once baked, leftovers will keep well-covered in the fridge for 2 to 3 days. To reheat, simply pop a portion in the microwave or warm the covered dish in the oven at 350°F (180 °C).

Can you freeze it? Absolutely! Let the casserole cool completely, discard the bay leaves, and freeze either the whole dish or individual portions in freezer-safe containers.

For the best results, thaw overnight in the fridge and reheat in the oven until piping hot throughout.

Delicious Variations & Swaps

Spice It Up: Stir classic cabbage-friendly herbs into the sauce, like caraway seeds (whole or ground), marjoram, or a sprinkle of fresh dill right before serving.

Add a Smoky Kick: Add a pinch of smoked paprika to the sauce for an extra layer of cozy flavor.

Pack in more veggies: Sauté sliced mushrooms, sliced leeks, or bell pepper strips right along with the sauce veggies.

Make it extra creamy: Stir a dollop of cream cheese or sour cream into the finished sauce.

Make it richer: Crisp up some diced bacon along with the sauce veggies for an extra savory kick.

Add rice to the meatballs: Mix a small amount of cooked rice or a soaked roll into the meat mixture (just like classic meat patties).

Make it cheesy: Sprinkle some shredded cheese over the casserole before baking. It’s not traditional, but oh man, it’s delicious!

Switch up the cabbage: Instead of pointed cabbage, feel free to use Savoy cabbage or standard green cabbage (you might just need to cook it a few minutes longer).

Ingredients You’ll Need for Lazy Cabbage Rolls

  • 2.2 lbs (1 kg) Yukon Gold or medium-starch potatoes
  • 1.1 lbs (500 g) pointed cabbage (or regular green cabbage)

For the Meatballs:

  • 1.3 lbs (600 g) ground meat (a beef and pork blend works great)
  • 1 yellow onion
  • ¼ cup (50 g) uncooked long-grain white rice
  • 1 large egg
  • 1 tsp mustard (yellow or Dijon)
  • 1 tsp salt
  • ¼ tsp freshly cracked black pepper
  • 1 tsp paprika

For the Sauce:

  • 1 yellow onion
  • 1 clove garlic
  • 2 medium carrots
  • 1 red bell pepper
  • 2 tbsp oil (neutral cooking oil or olive oil)
  • 50 g tomato paste
  • 500 ml vegetable broth
  • 50 ml heavy cream
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ¼ tsp sugar
  • 10 g all-purpose flour
  • 2 bay leaves

How to Make Lazy Cabbage Rolls

Prep Work:

Preheat your oven to 450°F (230°C).

Peel the potatoes and chop them into bite-sized cubes.

Quarter the pointed cabbage, remove the core, and cut it into bite-sized pieces.

For the Meatballs:

Peel and quarter the onion. Add it to the mixing bowl and chop for 5 sec / Speed 5. Scrape down the sides with your spatula.

Add the rest of the meatball ingredients and mix for 2 min / Dough Mode. Transfer the mixture to a bowl.

For the Sauce:

For the sauce, peel and quarter the onion, peel the garlic, peel the carrots and cut them into chunks, and seed the bell pepper and cut it into chunks as well.

Add everything to the mixing bowl and chop for 10 sec / Speed 5.

Use your spatula to scrape down the sides of the bowl.
Add the oil and tomato paste, then sauté for 3 min / 250°F (120°C) / Speed 2.

Next, pour in the vegetable broth and heavy cream, then add the salt, pepper, paprika, sugar, and flour.

First, bring to a boil for 3 min / 100°C / Speed 2, then puree for 30 sec / gradually increasing Speed from 5 to 8.

Layering & Baking:

Place the cubed potatoes into a large baking dish or Dutch oven.

Shape the meat mixture into about 12 meatballs and arrange them over the potatoes.
Tuck the chopped pointed cabbage pieces in and around the meatballs.

Next, pour the sauce evenly over the cabbage and top with the bay leaves.

Cover the baking dish with its lid and bake in the preheated oven for 60 to 70 minutes.

Remember to discard the bay leaves before serving.

  • Add everything to the mixing bowl and chop for 10 sec / Speed 5. Scrape down the sides of the bowl with the spatula.
  • 25 g Oil, 50 g Tomato paste
    Add the oil and tomato paste, then sauté for 3 min / 120 °C / Speed 2.
  • 50 ml Heavy cream, 1 tsp Salt, ½ tsp Black pepper, 1 tsp Paprika, ¼ tsp Sugar, 10 g All-purpose flour, 500 ml Vegetable broth
    Next, add the vegetable broth, heavy cream, salt, pepper, paprika, sugar, and flour. Bring to a boil for 3 min / 100 °C / Speed 2, then blend smooth for 30 sec / gradually increasing Speed 5-8.

Layer and Bake:

  • Place the cubed potatoes into a large baking dish or Dutch oven.
  • Shape the meat mixture into about 12 meatballs and nestle them over the potatoes.
  • Scatter and tuck the cabbage pieces around and over the meatballs.
  • 2 Bay leaves
    Pour the sauce evenly over the cabbage and top with the bay leaves.
  • Cover the baking dish with its lid (or foil) and bake in the preheated oven for 60–70 minutes.
  • Remove the bay leaves right before serving and enjoy!
