Recipe Tips & Tricks
Make sure your water isn’t too hot when activating the yeast (around 100°F / 37°C is the sweet spot). If it’s too hot, it will kill the yeast and your dough won’t rise.
Give the yeast dough plenty of time to rise in a warm spot after kneading. You want it to double in size, which usually takes about an hour.
If you don’t have a Thermomix®, no worries! You can easily knead the dough by hand or in a stand mixer fitted with a dough hook. The rise time stays the same.
Once risen, divide the dough into roughly 32 equal pieces. The easiest way to do this is to cut the dough in half, then into quarters, and keep dividing from there.
To shape the dough balls, pull the edges toward the center and pinch the seam tight underneath. This simple technique works like a charm to help the little dough balls hold their nice, round shape.
Arrange the dough balls on the baking sheet so they’re just touching. That way, they’ll bake together into a loaf that you can easily pull apart once it comes out of the oven.
Make sure to preheat your oven well to 425°F! This bread needs a nice hit of high heat right at the start to get beautifully golden brown and crispy on the outside.
The bake time is super quick—only about 15 minutes! Keep a close eye on it toward the end. You’re looking for a gorgeous golden brown, so if it starts getting too dark, go ahead and pull it out early.

Can I make this pull-apart bread ahead of time?
This pull-apart bread is amazing for prepping ahead! You can make the yeast dough the day before. After the first knead, just wrap it tightly in plastic wrap (instead of letting it rise for an hour at room temperature) and let it rise slowly in the fridge overnight.
It will slowly rise overnight. The next day, pull the dough out of the fridge, let it sit at room temperature for about 30 minutes to warm up, then form your dough balls, brush them with the herb mixture, and bake!
You can also whip up the herb mixture a few hours ahead of time and keep it chilled in the fridge.
Once baked and completely cooled, the bread will stay fresh for 1 to 2 days stored in a bread box or wrapped in a clean kitchen towel.
Can you freeze it? Absolutely! You can freeze the shaped, unbaked dough balls (just wrap them really well to prevent freezer burn).
When you’re ready to bake, thaw them overnight in the fridge and bake as directed in the recipe. You can also freeze the fully baked, cooled loaf.
Just let it thaw at room temperature, or pop it back in the oven for a few minutes to get it warm, soft, and delicious again.
Fun Recipe Variations
Cheese-Stuffed: Tuck a small cube of cheese (like feta, mozzarella, or a nice sharp alpine cheese) into the center of each dough ball before shaping and pinching them closed.
Switch up the cheese: Swap out the Parmesan for any freshly grated hard cheese, or mix up your favorite cheese blend to add to the herb mixture.
Go Mediterranean: Stir a handful of finely chopped sun-dried tomatoes or olives right into the herb mix.
Add a little kick: Toss in a pinch of red pepper flakes or a dash of smoked paprika for an extra pop of flavor.
Seeded topping: Sprinkle sesame seeds, poppy seeds, nigella seeds, or sunflower seeds over the brushed dough balls right before they hit the oven.
Try different herbs: Feel free to experiment with fresh or frozen herbs like rosemary, thyme, or oregano.
Garlic oil for dipping: Mix up a quick extra batch of good olive oil and minced garlic on the side for ultimate bread-dipping goodness.

Ingredients You’ll Need for Cheesy Herb Pull-Apart Bread
For the Dough:
- ½ cake fresh yeast (or 1 packet / 2¼ tsp active dry yeast)
- 1 level tbsp brown sugar
- 300 g water (lukewarm)
- 400 g all-purpose or bread flour
- 100 g semolina flour
- ½ tbsp salt
For the Herb Mixture:
- 2 cloves garlic
- 30 g oil (like olive oil or vegetable oil)
- 1 large egg
- 40 g grated Parmesan cheese
- 2 tbsp frozen herbs (like mixed garden herbs)

How to Make Cheesy Herb Pull-Apart Bread
Making the Yeast Dough:
First, add the yeast, sugar, and water to the mixing bowl.
Mix for 2 min / 37°C / Speed 2 to activate the yeast.
Now add the flour, durum wheat semolina, and salt to the mixing bowl and knead for 4 min / Dough Mode until a smooth dough forms.
Shape the dough into a ball, place it in a lightly floured or greased bowl, and let it rise in a warm spot for about an hour, until doubled in size.
Meanwhile, rinse out the mixing bowl.
Shaping the Dough Balls:
Near the end of the rise time, preheat your oven to 425°F (220°C).
Divide the dough into about 32 equal pieces. The easiest way to do this is to shape the dough into a ball, cut it in half, then into quarters, and keep dividing from there.
Shape each piece of dough into a small, round ball like this:
Take a piece of dough and flatten it in the palm of your hand. Pull the edges up toward the center to form a little pouch, then pinch the seams firmly together in the middle to seal.
Place the dough ball seam-side down on a baking sheet lined with parchment paper.
Repeat with the remaining dough, arranging the balls in a circular pattern on the baking sheet.
Make sure they are lightly touching and all roughly the same size so they bake evenly.
Making the Herb Mixture:
To start, peel the garlic and pop it into the mixing bowl. Chop for 7 sec / speed 5.
Next, add 20 g of oil and sauté the garlic for 2 min 30 sec / 120°C / speed 1.
Now add the remaining 10 g of oil, the egg, grated Parmesan, and frozen herbs to the mixing bowl. Mix for 10 sec / speed 4.
Generously brush the herb paste all over the rolls.
Baking:
Bake the pull-apart bread on the lower oven rack for about 15 minutes, or until beautifully golden brown.
Remove it from the oven and cover it with a clean kitchen towel until ready to serve.
Enjoy!

By the way, the prep times listed are just averages. Everyone cooks at their own pace, and sometimes things take a bit longer or shorter than expected.
Happy cooking!
