My Best Recipe Tips

When chopping the parsley, make sure to drop it straight onto the spinning blades while the Thermomix® is running. That way, it gets finely minced and mixes evenly throughout the entire salad.

If the red cabbage looks a bit too coarse after the first run, no worries at all! Just chop it for another 5 to 10 seconds until it reaches your ideal texture.

Don’t skip toasting the walnuts in a hot, dry skillet (no added oil!). Toasting brings out a rich, nutty depth that complements the cabbage beautifully.

Mixing everything right in the Thermomix® works like a charm. But if you prefer, you can also transfer the salad to a large bowl and massage the cabbage with your hands for a minute to soften it up just a bit.

Can You Make This Ahead and Store It?

Yes, absolutely! Red cabbage salad actually tastes even better when it has had a little time to sit and let all those delicious flavors marinate.

Just keep it tightly covered in the fridge, and it’ll stay fresh for several days.

Pro tip: be sure to pull it out of the fridge about 30 minutes before serving. Letting it come up to room temperature brings out the flavor so much better!

Fun Variations & Recipe Tips

Adjust the texture: You’re the boss of your Thermomix®! Simply chop the ingredients for a second less or longer depending on whether you like a chunkier crunch or a finely shredded slaw.

Going traditional: Prefer making it by hand? Skip the reverse mode on your machine and simply massage the chopped mixture with your hands in a mixing bowl until the cabbage softens up.

Serving ideas: You can sprinkle the crumbled feta and toasted walnuts right on top of the plated salad, or gently fold half of them directly into the mixture for a little creamy goodness in every bite.

How to Make Red Cabbage Salad with Apple, Walnuts, and Feta

Instructions:

Add the fresh parsley to the mixing bowl. Set the dial to Speed 10 and drop the parsley through the lid opening onto the running blades to chop. Use your spatula to scrape down the sides of the bowl.

Remove the outer leaves and hard core from the red cabbage. Add the cabbage to the mixing bowl along with the cored apple chunks and sliced green onions. Chop everything for 10 sec / Speed 5, guiding with the spatula if needed. Pro tip: If you prefer a finer texture, chop for another 5 to 10 seconds. Scrape down the sides of the bowl with your spatula.

Next, add the olive oil, apple cider vinegar, mustard, honey, salt, and pepper to the mixing bowl and mix for 4 sec / Speed 4. If necessary, give it a quick help with the spatula through the hole in the lid.

Now, let the salad massage together for 3 min / Reverse / Speed 3. (Alternatively, you can transfer it to a large bowl and knead it thoroughly with your hands to soften up the cabbage!)

Let the salad marinate for at least 30 minutes so all those wonderful flavors meld together. While it rests, chop the walnuts, toast them in a hot dry skillet until fragrant, and let them cool.

Once the red cabbage salad has had time to sit and let those flavors meld, give it a quick taste test and adjust the seasoning if needed. To serve, plate up the salad and top it off with the toasted walnuts, crumbled feta, and a sprinkle of fresh chopped parsley.

Enjoy!

Now it’s your turn—I hope you have so much fun making this one!
