Place the parsley into the mixing bowl. Set the dial to Speed 10 and drop the parsley through the lid opening onto the running blades to chop. Use the spatula to scrape down the sides of the bowl.
600 g Red cabbage, 1 Apple, 3 Green onions
Remove the outer leaves and core from the red cabbage. Add the cabbage chunks to the mixing bowl along with the cored apple chunks and sliced green onions. Chop with the help of the spatula for 10 sec / Speed 5.
Pro tip: If the pieces are still a bit too large for your liking, chop for another 5–10 seconds. Then scrape down the sides with the spatula.
30 g Extra virgin olive oil, 20 g Apple cider vinegar, ½ tsp Mustard, 1 tsp Salt, 3 Prisen Black pepper, 2 tsp Honey
Next, add the olive oil, apple cider vinegar, mustard, honey, salt, and pepper to the mixing bowl and mix for 4 sec / Speed 4. If needed, assist with the spatula through the lid opening.
Then, gently mix the salad for 3 min / Reverse / Speed 3. (Alternatively, you can transfer it to a large bowl and massage it thoroughly with your hands.)
80 g Walnuts
Let the salad marinate for at least 30 minutes. Meanwhile, chop the walnuts, toast them in a hot dry skillet (no oil) until fragrant, and let them cool.
½ bunch Parsley, 80 g Walnuts, 100 g Cubed feta cheese
Give the cabbage salad a quick taste test after resting and adjust the seasoning if needed. To serve, plate up the salad and top with the toasted walnuts, feta, and a little fresh chopped parsley.
Notes
Stored in the fridge, this salad will keep for several days. Just make sure to take it out of the fridge about 30 minutes before serving so the flavors shine!
