Keep an eye on the heavy cream while it whips—just peek right through the lid opening. That way, you hit that sweet spot and avoid accidentally turning your cream into butter.

Stir the coffee powder thoroughly into the hot water until completely smooth before adding it in. This ensures you won’t end up with any annoying little lumps in your mousse.

At the end, gently fold the coffee-quark mixture into the whipped cream using your spatula. The lighter your touch, the airier and fluffier your mousse will be!

Yes, absolutely! In fact, I actually recommend making this mousse a few hours ahead of time—or even the day before to keep things totally stress-free. As it chills in the fridge, those layered ribbons of melted chocolate firm back up, giving you the absolute best crunchy chocolate crackle in every bite. Just cover the glasses well and keep them cold.

Easy Recipe Variations

Switch up the chocolate: If dark chocolate is a little too rich for your taste, you can swap it 1:1 with milk chocolate! It’ll make the mousse a bit milder and sweeter.

Coffee-free option: Making this for kids or just not a fan of coffee? Simply skip the instant coffee granules and hot water altogether, and whisk half a teaspoon of unsweetened cocoa powder into the quark instead.

Try a different quark fat content: You can use low-fat or whole milk quark depending on what you prefer. Going with a higher-fat version makes the mousse feel even richer and extra indulgent.

Ingredients You’ll Need for Mocha Mousse

  • 3.5 oz (100 g (approx. 3.5 oz)) dark baking chocolate (roughly chopped)
  • 1 cup (250 g (approx. 9 oz)) quark (low-fat or whole milk)
  • 3/4 cup (200 g (approx. 7 oz)) heavy cream (chilled!)
  • 1/3 cup (40–50 g (approx. 2 oz)) powdered sugar
  • 1 packet vanilla sugar (or 1 tsp vanilla extract)
  • 1 pinch of salt
  • 1 tbsp instant coffee granules
  • 1 tbsp hot water

For garnish:

  • Chocolate shavings
  • Fresh mint leaves

How to Make Mocha Mousse

Add the roughly chopped chocolate to the mixing bowl and chop 8 sec / Speed 8.

Scrape down the sides with the spatula and melt 4 min / 50°C (120°F) / Speed 1.

Transfer all of the melted chocolate into a small bowl and set it aside. Thoroughly clean the mixing bowl and rinse it with ice-cold water (super important for getting that whipped cream perfect!).

Insert the butterfly whisk. Pour the cold heavy cream into the clean bowl and whip at Speed 3.5 until stiff peaks form. Don’t walk away—keep a close eye on the texture through the lid opening! It takes about 1.5 minutes.

Transfer the whipped cream to a separate bowl.

Next, stir the instant coffee granules with 1 tablespoon of hot water in a small cup until completely dissolved.

Add the quark, powdered sugar, vanilla sugar, pinch of salt, and dissolved coffee to the mixing bowl (no need to wash it first!).

Whip everything 2 min / Speed 4 (with the butterfly whisk) until smooth and creamy. You’ll end up with a light, fluffy base.

Add the coffee-quark mixture to the bowl with the whipped cream and gently fold everything together using a spatula.

Spoon a layer of the mousse into your serving glasses.

Drizzle a teaspoon of the melted chocolate over the top and swirl it gently using a wooden skewer or the handle of a spoon.

Repeat the layering process (mousse – chocolate – mousse – chocolate). Swirl the top layer of chocolate in a gentle spiral pattern to create a gorgeous marbled effect.

Keep the dessert chilled in the fridge until you’re ready to serve. As it chills, the melted chocolate sets back up, forming ultra-thin, snappy layers throughout.

Right before serving, garnish with a few coarse chocolate shavings and a fresh mint leaf for that special touch.

    Layer the mousse and the melted chocolate into your serving glasses. For a gorgeous finish, swirl the top layer of chocolate in a spiral motion to create a marbled effect.
