This dish freezes like a dream, too. Just let the casserole cool completely, then transfer it to a freezer-safe container. To serve, thaw it overnight in the fridge and reheat it in the oven or microwave until bubbly.

Ingredients You’ll Need

  • 14 oz macaroni noodles
  • 14 oz ground meat (lean ground beef or a pork/beef blend)
  • 1 yellow onion
  • 1 garlic clove
  • 1 ½ tbsp cooking oil
  • 2 tbsp tomato paste
  • 2 cups tomato purée (or unseasoned tomato sauce)
  • 2 ½ cups water
  • 1 beef bouillon cube
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 level tsp salt
  • ¼ tsp black pepper
  • 1 tsp sugar
  • ½ cup crème fraîche (sour cream or ricotta work great, too!)
  • 2 cups shredded cheese (like mozzarella or cheddar)

How to Make This Baked Macaroni Casserole

Step-by-Step Instructions:

Preheat your oven to 350°F (180 °C).

Pour the uncooked macaroni directly into a baking dish.

Next, brown the ground beef in a skillet until nicely crumbled. Season with salt and pepper, then transfer it to the baking dish over the pasta.

Now, let’s whip up the sauce! Peel and quarter the onion, and peel and halve the garlic clove. Add both to the mixing bowl and chop for 5 sec / speed 5. Use your spatula to scrape down the sides of the bowl, then repeat the chop once more.

Add the oil and tomato paste, then sauté for 2.5 min / 250°F (120 °C) / speed 1.

Then add the remaining ingredients—the tomato sauce, water, beef broth, basil, oregano, sugar, salt, and pepper—and bring to a boil for 5 min / 100 °C / Speed 2.

Pour the sauce over the pasta and ground beef mixture and stir well, making sure all the pasta is completely coated in the sauce. This step is super important so the pasta cooks through properly right in the sauce!

Finally, dollop spoonfuls of crème fraîche over the top, sprinkle generously with cheese, and bake on the rack in the lower third of your oven for 30–35 minutes.

Note: Baking times can vary depending on your oven. Mine was perfectly done right at the 30-minute mark.

Garnish with fresh parsley or basil, serve hot, and enjoy!

  • 400 g Macaroni
  • 400 g Ground meat ground beef or a beef/pork blend

  • 1 tsp Salt level
  • ¼ tsp Black pepper
  • 1 tsp Sugar
  • ½ Crème fraîche 1 container; sour cream or ricotta work great too
  • 200 g Shredded cheese

Zubereitung
 

  • Preheat your oven to 180 °C (350 °F) conventional heat.
  • 400 g Macaroni
    Add the uncooked macaroni directly into a baking dish.
  • 400 g Ground meat, 1 tsp Salt, ¼ tsp Black pepper
    In a skillet, brown the ground meat until crumbly. Season generously with salt and pepper, then transfer it to the baking dish with the pasta.
  • 1 Onion, 1 Garlic clove
    Next up, let’s make the sauce! Peel and quarter the onion, and peel and halve the garlic clove. Add both to the mixing bowl and chop for 5 sec / speed 5. Scrape down the sides of the bowl with your spatula and repeat.
  • 20 g Oil, 40 g Tomato paste
    Add the oil and tomato paste, then sauté for 2.5 min / 120 °C / speed 1.
  • 500 ml Tomato purée, 600 ml Water, 1 Beef bouillon cube, 1 tsp Basil, 1 tsp Oregano, 1 tsp Sugar
    Add the remaining sauce ingredients—tomato purée, water, beef bouillon, basil, oregano, sugar, salt, and pepper—and bring to a simmer for 5 min / 100 °C / speed 2.
  • Pour the hot sauce over the macaroni and ground meat mixture and give it a good stir, making sure all the pasta is fully coated and submerged. This step is key so the noodles cook up tender right in the sauce!
  • ½ Crème fraîche, 200 g Shredded cheese
    To finish, dollop spoonfuls of crème fraîche over the top, sprinkle generously with shredded cheese, and bake on the rack in the lower third of your oven for 30-35 minutes.
  • Note: Baking times can vary slightly depending on your oven. Mine was perfectly cooked right at the 30-minute mark!
  • Garnish with fresh parsley or basil, and serve hot. Enjoy!

  • 400 g Makkaroni
  • 400 g Hackfleisch gemischt oder Rind
  • 1 Zwiebel
  • 1 Knoblauchzehe
  • 20 g Öl
  • 40 g Tomatenmark
  • 500 ml passierte Tomaten
  • 600 ml Wasser
  • 1 Würfel Rinderbrühe für 500 ml
  • 1 TL Basilikum getrocknet
  • 1 TL Oregano getrocknet
  • 1 TL Salz gestrichen
  • ¼ TL Pfeffer
  • 1 TL Zucker
  • ½ Becher Crème fraîche alternativ Schmand oder Ricotta
  • 200 g geriebener Käse

Zubereitung
 

  • Den Backofen auf 180 °C Ober-/Unterhitze vorheizen.
  • 400 g Makkaroni
    Die ungekochten Makkaroni in eine Auflaufform geben.
  • 400 g Hackfleisch, 1 TL Salz, ¼ TL Pfeffer
    Dann das Hackfleisch in einer Pfanne krümelig anbraten. Mit Salz und Pfeffer würzen und zu den Nudeln geben.
  • 1 Zwiebel, 1 Knoblauchzehe
    Als Nächstes die Soße zubereiten. Dazu die Zwiebel schälen und vierteln, die Knoblauchzehe abziehen und halbieren. Beides in den Mixtopf geben und 5 Sek. / Stufe 5 zerkleinern. Mit dem Spatel vom Rand nach unten schieben und den Vorgang wiederholen.
  • 20 g Öl, 40 g Tomatenmark
    Anschließend Öl und Tomatenmark zugeben und 2,5 Min. / 120 °C / Stufe 1 dünsten.
  • 500 ml passierte Tomaten, 600 ml Wasser, 1 Würfel Rinderbrühe, 1 TL Basilikum, 1 TL Oregano, 1 TL Zucker
    Dann die restlichen Zutaten, d. h. passierte Tomaten, Wasser, Rinderbrühe, Basilikum, Oregano, Zucker, Salz und Pfeffer zugeben und 5 Min. / 100 °C / Stufe 2 aufkochen lassen.
  • Die Soße über die Nudel-Hackfleisch-Mischung gießen und gut vermengen, sodass die Nudeln von der Soße umgeben sind. Das ist wichtig, damit die Nudeln in der Soße gar werden!
  • ½ Becher Crème fraîche, 200 g geriebener Käse
    Zum Schluss Crème fraîche löffelweise darauf verteilen, mit Käse bestreuen und die Auflaufform auf dem Rost im unteren Ofendrittel 30-35 Minuten backen.
  • Hinweis: Die Backzeit kann je nach Ofen variieren. Bei mir wurde der Auflauf 30 Minuten im Ofen gebacken.
  • Mit Petersilie oder Basilikum garnieren und servieren.
