Packed with tender chicken, fresh veggies, and delicious pasta, this comforting soup is a total crowd-pleaser for the whole family! It's perfect for chilly weather or those busy weeknights when you need a quick, wholesome meal on the table.
Peel the carrots, trim the ends, and cut them into large chunks. Slice the leek in half lengthwise and rinse thoroughly under cold running water, gently pulling the green leaves apart to wash away any hidden dirt or grit. Shake the fresh leek dry and slice it into rings.
100 g Celery
Peel the celery and cut it into chunks as well.
Some Fresh parsley
Pluck the parsley leaves from their stems.
400 g Chicken tenderloins
Finally, pat the chicken tenderloins dry with paper towels and cut them into bite-sized pieces.
Instructions:
First, chop the parsley: With the machine running at Speed 5 (no time set), drop the parsley leaves through the hole in the lid onto the spinning blades. Transfer to a bowl and set aside.
25 g Oil
Next, add the sliced leek and oil to the mixing bowl and sauté 3 min / 120°C (250°F) / Reverse / Speed 1.
Add the carrots and celery, chop for 5 sec / Speed 5, then use your spatula to scrape down the sides of the mixing bowl.
400 ml Chicken stock, 500 ml Water
Next, add the chicken stock, water, and chicken tenderloin pieces. Cook for 15 min / 100°C (210°F) / Reverse / Speed 1, placing the simmering basket on top of the mixing bowl lid instead of the measuring cup to prevent splashes.
125 g Shell pasta
Now add the shell pasta and cook for the time indicated on the pasta package at 100°C (210°F) / Reverse / Gentle Stir Speed.
Salt to taste, Black pepper to taste
Season the soup to taste with salt and pepper, then ladle into warm bowls and sprinkle with the chopped fresh parsley.
