My Top Recipe Tips
Feel free to adjust how much you blend! You can puree more or less of the veggies depending on your favorite texture. Pro tip: Puree them completely if you’re trying to hide the veggies from picky eaters! 🙂
Optionally, you can blend the potatoes right along with the veggies for an extra creamy base.
To brighten up all the rich flavors, try adding a squeeze of fresh lemon juice or a dash of apple cider vinegar right before serving.

Honestly, it often tastes even better the next day once all those delicious flavors have had time to meld together.
You can also freeze it in individual portions—just thaw and reheat whenever you need a quick, cozy weeknight dinner.
Recipe Variations
Mix in extra veggies, like celery, parsnips, or green beans.
Swap out the traditional smoked sausage for kielbasa, sliced hot dogs, cabanossi, or your favorite sausage.
Toss in a little smoky bacon or pork belly for a deeper, extra-savory flavor.
Add a dash of curry powder or your favorite warm spices to give it a fun flavor twist.
Stir in a splash of heavy cream or a dollop of crème fraîche right at the end for an extra-creamy finish.

How to Make This Pea Soup
Prep Work:
Peel and dice the potatoes.
Peel the carrots and slice them into thin rounds.
Peel and quarter the onion.
Trim off the dark, wilted tops and the root end of the leek. Slice the leafy green portion lengthwise and rinse thoroughly under cold running water, gently fanning out the leaves to flush out any hidden dirt and grit.
Shake off the excess water really well, then slice the leek into thin rings.
Instructions:
First, add the onions to the mixing bowl and chop 5 sec / Speed 5.
Next, add the butter and sauté 2 min / 120°C (250°F) / Speed 1.
Now, add the vegetable broth and seasonings right into the mixing bowl.
Place the potatoes into the simmering basket, then set it inside the mixing bowl.
Place the butterfly whisk into the bottom of the Varoma® dish and add the carrots and leeks, making sure not to cover all the steam vents. (Pro tip: Placing the butterfly whisk underneath keeps the steam vents open for much better heat circulation!).
Spread the peas across the Varoma® tray.
Set the Varoma® in place and cook 20 min / Varoma® / Speed 1.
Once the timer goes off, give the carrots and leeks a quick stir, then transfer the peas from the tray into the dish with the carrots and leeks.
Slice the smoked sausages and spread them onto the Varoma® tray where the peas were.
Place the Varoma® back on top and steam for another 25 min / Varoma® / Speed 1 until everything is perfectly tender.
When done, transfer the cooked potatoes, sliced sausage, and half of the veggies (carrots, leeks, and peas) into a large soup pot.
Pour the remaining half of the veggies back into the mixing bowl, add the sour cream, and blend 40 sec / Speed 9 until smooth and creamy.
Pour the pureed soup into the pot with the rest of the ingredients, give it a good stir, and enjoy!
Enjoy!

By the way, the prep times listed are just averages. Everyone cooks at their own pace, and sometimes things take a bit longer or shorter than expected.
