Zubereitung
Prep:
600 g Potatoes
Peel and dice the potatoes.
300 g Carrots
Peel the carrots and slice them into thin rounds.
2 Small yellow onions
Peel and quarter the onion.
1 Leek
Trim the root and any wilted tops off the leek. Cut the green stalk in half lengthwise and rinse thoroughly under cold water, pulling the leaves apart to flush out any hidden dirt or grit. Shake off the excess water and slice into rounds.
Instructions:
20 g Butter
Add the onions to the mixing bowl and chop for 5 sec / speed 5. Add the butter and sauté for 2 min / 120°C / speed 1.
800 ml Vegetable broth, 2 tbsp Herbs, 1 tsp Salt, ½ tsp Black pepper, pinch Ground nutmeg
Next, add the vegetable broth and spices to the mixing bowl.
Place the diced potatoes into the simmering basket and insert it into the mixing bowl.
Place the butterfly whisk flat in the bottom of the Varoma® dish and add the carrots and leeks on top, making sure not all steam vents are covered. (Using the whisk under the veggies creates space for better steam circulation!).
300 g Frozen peas
Spread the frozen peas onto the Varoma® tray.
Set the Varoma® in place and steam for 20 min / Varoma® / speed 1.
Once the timer goes off, give the carrots and leeks a quick stir, then transfer the peas from the tray into the main Varoma® dish with the other veggies.
300 g Smoked German sausages (Mettenden)
Slice the smoked sausages and place them onto the Varoma® tray in place of the peas.
Put the Varoma® back on top and steam for another 25 min / Varoma® / speed 1.
Once finished, transfer the cooked potatoes, sliced sausage, and half of the steamed veggies (carrots, leeks, and peas) into a large soup pot.
100 g Sour cream
Add the remaining half of the veggies to the mixing bowl along with the sour cream, and puree for 40 sec / speed 9 until silky smooth.
Pour the pureed veggies into the soup pot with everything else, give it a good stir, and enjoy!
Notes
Instead of blending just half of the veggies, feel free to blend more or less depending on your texture preference! Pro tip: Blend all the veggies completely if you're trying to sneak them past picky eaters. :-)
You can also blend the potatoes right in if you want an extra creamy base!
To brighten up the flavors and add a splash of freshness, stir in a squeeze of fresh lemon juice or a dash of apple cider vinegar right before serving.
