If you're looking for an easy bread recipe that’s perfect for cookouts or parties, smells incredible, tastes amazing, and is completely foolproof, you absolutely have to try this Herby Cheese Pull-Apart Bread!
½ cube fresh yeast, 1 tbsp brown sugar, 300 g water
First, add the yeast, brown sugar, and water to the mixing bowl. Mix for 2 min / 37 °C / Speed 2 to activate the yeast.
400 g all-purpose flour or bread flour, 100 g durum wheat semolina, ½ tbsp salt
Now add the flour, semolina, and salt to the mixing bowl and knead for 4 min / Dough Mode until a smooth dough forms.
Shape the dough into a ball, place it in a lightly floured or greased bowl, cover, and let it rise in a warm spot for about an hour until doubled in size.
Rinse out the mixing bowl while you wait.
Shaping the dough balls:
Towards the end of the rising time, preheat your oven to 220 °C conventional top/bottom heat.
Divide the dough into about 32 equal pieces. The easiest way to do this is to shape the dough into a ball, cut it in half, then into quarters, and keep dividing!
Shape each piece into a little round roll like this:
Place a piece of dough flat on the palm of your hand. Pull the edges up toward the center to form a little pouch. Pinch the edges tightly together in the center to seal the seam.
Place the shaped dough ball seam-side down onto a baking sheet lined with parchment paper.
Repeat with the remaining dough pieces, arranging the balls in a circular pattern on the baking sheet. Make sure they are touching slightly and are all roughly the same size so they bake evenly.
Making the herb mixture:
2 garlic cloves
Peel the garlic cloves and drop them into the mixing bowl. Chop for 7 sec / Speed 5.
30 g oil
Add 20 g of oil and sauté the garlic for 2 min 30 sec / 120 °C / Speed 1.
30 g oil, 1 egg, 40 g Parmesan cheese, 2 tbsp frozen herbs
Add the remaining 10 g of oil, the egg, grated Parmesan, and frozen herbs to the mixing bowl. Mix for 10 sec / Speed 4.
Generously brush the herb mixture all over the dough balls.
Baking:
Bake the pull-apart bread in the lower third of the oven for about 15 minutes, or until beautifully golden brown. Remove from the oven and cover with a clean kitchen towel until ready to serve.
