Ingredients for Baked Tortellini alla Panna
- 14 oz refrigerated tortellini (use your favorite filling!)
- 3.5 oz cooked ham, diced
- 1/2 cup shredded cheese
For the Sauce:
- 1 small onion
- 1 garlic clove
- 1 tbsp olive oil
- 2 cups heavy cream (or heavy whipping cream)
- 2 egg yolks
- 1 tbsp cornstarch
- 1 tsp salt
- 1 pinch black pepper
- A dash of nutmeg
- Fresh parsley, chopped

How to Make Baked Tortellini alla Panna
Prep Work:
Dice the ham into small cubes.
Spread the tortellini in a baking dish and scatter the diced ham evenly over top.
Instructions:
Preheat your oven to 400°F (or 350°F convection / 200°C (400°F)).
Peel and quarter the onion, and peel and halve the garlic. Add both to the mixing bowl and chop 5 sec / Speed 5.
Scrape down the sides of the mixing bowl with a spatula and repeat.
Add the olive oil and sauté 2 min / 120°C (250°F) / Speed 1.
Next, pour in 14 oz (400 g (approx. 14 oz)) of heavy cream and bring to a simmer for 6 min / 100°C (210°F) / Speed 1.
Meanwhile, whisk together the remaining sauce ingredients (3.5 oz / 100 g (approx. 3.5 oz) heavy cream, egg yolk, cornstarch, salt, pepper, and nutmeg) in a small bowl until completely smooth.
Once the timer goes off, pour this mixture into the mixing bowl and cook for another 6 min / 90°C (190°F) / Speed 1.
Pour the warm sauce right over the tortellini. Top with shredded cheese and a little freshly chopped parsley, then bake on the lower oven rack for 30 minutes until golden and bubbly.

- 100 g (approx. 3.5 oz) Cooked hamDice the ham into small cubes.

- 1 Small onion, 1 Garlic clovePeel and quarter the onion, and peel and halve the garlic. Add both to the mixing bowl and chop for 5 sec / Speed 5. Use the spatula to scrape down the sides of the bowl, then repeat the process.
- 15 g (approx. 0.5 oz) Olive oilAdd the olive oil and sauté for 2 min / 120°C (250°F) / Speed 1.
