My Pro Tips for Success
I highly recommend using tart apples (like Granny Smith)—they provide such a gorgeous contrast to the sweet cinnamon-sugar filling.
Forgot to take your butter out of the fridge to soften? No worries at all! Just use the 45°C setting on your Thermomix® for the batter as noted in the recipe.
Using a baking frame on your baking sheet helps keep the batter perfectly in shape so it doesn’t spill over the edges while baking.
Make sure to spread the glaze over the cake while it’s still warm so it melts right in and perfectly coats every bite.

Can I make this cake ahead of time?
Absolutely! This cake is perfect for making a day in advance.
Just keep it tightly covered in a cool spot, and it will stay wonderfully moist and soft for two to three days.
Fun Variations to Try
Different apples: If you don’t have any tart apples on hand, feel free to swap in whatever apple variety you have sitting in your fruit bowl!
No baking frame? If you don’t own an adjustable baking frame, no worries! Just spread the batter out evenly on your baking sheet, stopping just short of the edges.

How to Make Apple Cinnamon Roll Cake
Directions:
Start by peeling and coring your apples. Dice them up into small cubes and set them aside for now.
Next, line a baking sheet with parchment paper (you can also use a baking frame if you have one) and preheat your oven to 350 °F convection.
For the cake batter, add the room-temperature butter, sugar, vanilla sugar, and eggs to the mixing bowl and mix everything for 1 min. / speed 5.
Pro tip: If your butter is still cold straight from the fridge, just set your machine to 1 min. / 115 °F (45 °C) / speed 5.
Next, toss in the milk, salt, flour, and baking powder. Mix it all together for another 20 sec. / speed 5 until you get a nice, smooth batter.
Now, transfer the batter to a bowl, fold in those diced apples, and spread the mixture evenly onto your prepared baking sheet.
For the cinnamon-sugar swirl, add the butter pieces, brown sugar, flour, cinnamon, and vanilla extract to the mixing bowl. Mix everything for 2 min. 30 sec. / 50 °C / speed 2. Next, dollop the mixture over your batter and use a spoon to swirl it around for a pretty marbled effect.
Bake the cake for 30 minutes. You’ll know it’s done when a toothpick inserted into the center comes out clean!
Once it’s out of the oven, let your cinnamon roll cake cool for about 15 minutes.
While that’s cooling, whisk together the crème fraîche, powdered sugar, and cinnamon until perfectly smooth. Grab a pastry brush and spread this luscious glaze right over the warm cake.
Enjoy!
Alright, now it’s your turn—have so much fun baking this one!
