Ingredients You’ll Need for Homemade Flatbread

  • 220 ml water
  • ½ cube fresh yeast
  • 1 tsp sugar
  • 360 g all-purpose flour (or bread flour)
  • 2 tbsp olive oil
  • 1 tsp salt

Plus:

  • 1 tbsp milk
  • 1 tbsp oil
  • Sesame seeds (for sprinkling)

How to Make Homemade Flatbread

Instructions:

Add the water and sugar to the mixing bowl, then crumble in the yeast. Set to 2 min / 37°C / Speed 2.

Now add the flour, salt, and oil, and knead for 6 min / Dough Mode.

Turn off your Thermomix® and let the yeast dough rise right in the mixing bowl with the lid on for 30 minutes.

Scrape the dough out of the bowl onto a parchment-lined baking sheet, and use lightly floured fingers to gently shape it into a round flatbread.

Press a diamond or crisscross pattern into the top of the dough using a dough scraper or bench knife.

Cover the dough with a clean kitchen towel and let it rise one more time for 20 minutes. While it’s rising, preheat your oven to 450°F (230°C).

Mix the oil and milk together, then brush it generously over the top of the flatbread.

Sprinkle a handful of sesame seeds on top and bake on the bottom rack for 10–12 minutes, until beautifully golden brown.

Pull the flatbread out of the oven and immediately cover it with a kitchen towel.

Let it cool completely wrapped under the towel.

Pro Tip: Don’t skip this step! Covering it traps the steam and makes the flatbread ultra-soft and fluffy.
