How to Make Herb Pull-Apart Bread
Prep Work:
Line a 10-inch springform pan with parchment paper.
Instructions:
First, add the water to the mixing bowl. Add the sugar and crumbled fresh yeast, then warm for 2 min / 100°F / Speed 2.
Next, add the salt, olive oil, and flour, then knead for 3 min / Dough Mode to form a smooth dough.
Turn off your Thermomix® and let the yeast dough rise right in the mixing bowl with the lid on for 30 minutes.
After rising, transfer the dough onto a lightly floured work surface or pastry mat and roll it out with a rolling pin to roughly the size of a standard baking sheet.
Now, let’s make the herb butter in the Thermomix®.
To make the herb butter, add the garlic, onion, and fresh herbs into the mixing bowl and chop for 8 sec / Speed 5.
Scrape down the sides of the bowl with a spatula and repeat.
Scrape down the sides once more, add the softened butter and salt, and mix for 30 sec / Speed 5.
Spread the herb butter evenly over the rolled-out dough using an offset spatula or a cake server.
Slice the dough into 12 strips using a pizza cutter or a sharp knife.
Accordion-fold each strip back and forth in a zigzag pattern (“WW” style) and arrange them in your springform pan (check out the video in the recipe card below to see how it’s done!).
Cover and let it rise in the springform pan for another 30 minutes.
In the meantime, preheat your oven to 400°F (200°C).
Place the springform pan onto a baking sheet (to catch any butter that drips!) and bake on the lower oven rack for about 25 minutes.
If the top starts browning too quickly, loosely tent it with aluminum foil for the last 5 minutes of baking.
