For the yeast dough:
300gWater
½Fresh yeast cake
1tspSugar
300gAll-purpose flour (German Type 405)
300gSpelt flour (German Type 630)Optional. Alternatively, you can use 600 g of all-purpose flour total.

For the herb butter:
150gSoftened butter
1tspSalt
1Garlic clove
1Red onionquartered
1Handful of fresh herbse.g., basil and parsley
Zubereitung
Prep:
Line a 26 cm (10-inch) springform pan with parchment paper.
Instructions:
First, add the water to the mixing bowl. Add the sugar and crumbled yeast, then warm for 2 min / 37°C / Speed 2.
Next, add the salt, olive oil, and flour, and knead for 3 min / Dough Mode until a smooth dough forms.
Turn off the Thermomix® and let the dough rise directly in the mixing bowl with the lid closed for 30 minutes.
Transfer the dough onto a lightly floured work surface or silicone mat and roll it out with a rolling pin to roughly the size of a standard baking sheet.
Now, let's whip up that delicious herb butter in the Thermomix®!
Add the garlic clove, quartered red onion, and fresh herbs to the mixing bowl and chop for 8 sec / Speed 5. Scrape down the sides of the bowl with a spatula and repeat.
Scrape down the sides again, add the softened butter and salt, and blend for 30 sec / Speed 5.
Spread the herb butter evenly over the rolled-out dough using an offset spatula or cake server.
Using a pizza cutter or sharp knife, slice the dough into 12 equal strips.
Fold each strip back and forth in a zigzag accordion shape (like a 'W') and set them vertically side-by-side in the prepared springform pan (check out the video for a quick visual!).
Cover and let the bread rise in the springform pan for another 30 minutes.
Meanwhile, preheat your oven to 200°C (400°F) conventional heat.
Place the springform pan on a baking sheet (to catch any buttery drips!) and bake on the lower rack for about 25 minutes. If the top gets too dark near the end, loosely tent with aluminum foil for the last 5 minutes.
Serve your warm herb pull-apart bread right away, or cover with a clean kitchen towel after baking to keep it soft and cozy!

Feel free to swap in other fresh herbs for the herb butter, like chives, thyme, wild garlic, or whatever you have on hand.
If you want to save a little time, store-bought herb butter works just as well!
Instead of herb butter, you can also fill the bread with garlic butter or homemade sun-dried tomato butter. Yum!
