What Ingredients Do You Need for Minestrone?
- 1 yellow onion
- 1 garlic clove
- 20 g extra virgin olive oil
- 1 carrot
- 2 celery ribs
- 1 medium potato
- 1 zucchini
- 2-3 tsp vegetable bouillon base
- 1 tsp dried oregano
- approx. 750 ml water
- 400 g canned diced tomatoes
- 50 g tomato paste
- 100 g small pasta shells
- 1 small can white beans (drained weight 255 g)
- 2 slices bacon (optional)
- Salt and black pepper, to taste
For garnish:
- Fresh herbs
- Red pepper flakes
- Grated Parmesan cheese

How to Make Minestrone
Prep Work:
First, let’s chop up all the veggies.
Peel and quarter the onion, then peel and halve the garlic clove.
Next, peel the carrot and potato and cut them into small dice.
Dice the zucchini as well.
Peel the celery and slice it thinly.
Place the beans in a colander, rinse them under cool running water, and set aside.
Instructions:
Add the onion and garlic to the mixing bowl and chop for 3 sec / speed 6.
Use your spatula to scrape down the sides of the bowl, then repeat the chop.
Add the olive oil and sauté for 3 min / 100°C (212°F) / speed 1 without the measuring cup.
Next, add the remaining veggies (carrot, celery, potato, and zucchini), canned tomatoes, tomato paste, vegetable broth, oregano, and water, then cook for 15 min / 100 °C / Reverse / Speed 1.
Place the simmering basket on top of the mixing bowl lid instead of the measuring cup to prevent splatters.
Just make sure not to exceed the MAX fill line!
Once the time is up, add the pasta (giving it a quick stir with a spoon), and cook for another 12 min / 100 °C / Reverse / Speed 1.
In the meantime, fry the bacon in a hot skillet until nice and crispy, then chop into bite-sized pieces. (This step is totally optional—feel free to skip the bacon if you prefer!)
Finally, add the beans and crispy bacon, then stir in for 1 min / 100 °C / Reverse / Speed 1.
Season with salt and pepper to taste, then top with fresh herbs and grated Parmesan cheese. Serve nice and warm.
