- 40 g sugar
- 1 tsp speculoos spice (or pumpkin pie spice)
For Layering & Assembly:
- 200 g speculoos cookies (such as Biscoff)
- 1 can mandarin oranges (drained weight approx. 8.5 oz / 240 g)

How to Make This Speculoos Mandarin Dessert
Prep Work:
Drain the mandarin oranges thoroughly in a colander or fine-mesh strainer.
Set a few speculoos cookies aside to use for garnish later. Place the rest of the cookies into a ziplock bag, seal it up, and crush them into fine crumbs using a rolling pin.
Alternatively, you can crush the cookies right in your Thermomix® (3 sec / speed 5)—just be sure to give the mixing bowl a quick rinse afterward before moving on to the next step.
Making the Cream:
First, rinse your mixing bowl with cold water.
Next, add the cold heavy cream (straight from the fridge) to the mixing bowl and whip for 10–20 sec / Speed 10 (until the blades spin freely).
Transfer the whipped cream to a bowl and pop it in the fridge. Give the mixing bowl a quick rinse and dry it thoroughly!
Next, add the chocolate pieces to the mixing bowl and melt for 5 min / 120°F (50°C) / Speed 2.
Pause halfway through to scrape down the sides of the bowl with your spatula.
Then, add the quark, mascarpone, sugar, and speculoos spice, and mix for 30 sec / Speed 4.
Fold in the reserved whipped cream and mix for another 10 sec / Speed 4.
Layering the Dessert:
Divide the cookie crumbs evenly among the bottoms of your serving glasses.
Grab the cream mixture from the fridge and spoon it right over the cookies.
Roughly chop the mandarin oranges (or leave them whole!) and layer them on top of the cream. Finish with a crumble of your reserved cookies for garnish.
Chill in the fridge until you’re ready to serve.
