Ingredients for 6-8 glasses (approx. 200 ml each):
For the cream filling:
100-150gwhite chocolate
200gheavy whipping creamchilled
250gquark
250gmascarpone cheese
40gsugar
1tspspeculoos spice mix
For assembly & garnish:
200gspeculoos cookies
1Dosecanned mandarin oranges240 g drained weight
Zubereitung
Prep Work:
1 Dose canned mandarin oranges
Drain the mandarin oranges in a fine-mesh strainer.
200 g speculoos cookies
Set aside a few speculoos cookies for garnish. Place the rest into a ziplock bag, seal tightly, and crush them using a rolling pin. Alternatively, crush the cookies in your Thermomix® (3 sec / speed 5)—just be sure to rinse out the mixing bowl afterward before moving on to the next step.
Making the Cream:
200 g heavy whipping cream
First, rinse the Thermomix mixing bowl with cold water. Pour in the cold heavy cream (straight from the fridge) and whip for 10–20 sec (until the blades spin freely) / speed 10.
Transfer the whipped cream to a bowl and pop it in the fridge. Rinse the mixing bowl and dry it thoroughly!
100-150 g white chocolate
Next, break the white chocolate into pieces, add to the mixing bowl, and melt for 5 min / 50 °C / speed 2. Pause halfway through to scrape down the sides of the bowl with your spatula.
250 g quark, 250 g mascarpone cheese, 40 g sugar, 1 tsp speculoos spice mix
Add the quark, mascarpone, sugar, and speculoos spice mix to the bowl and combine for 30 sec / speed 4.
Gently mix the whipped cream back in for another 10 sec / speed 4.
Assembling the Parfaits:
Divide the cookie crumbs evenly among the bottoms of your dessert glasses.
Spoon or pipe the luscious cream mixture over the layer of crushed cookies.
Roughly chop the mandarin oranges (or leave them whole) and arrange them over the cream layer. Finish by garnishing with the reserved speculoos cookies.
Chill in the fridge until ready to serve.
Pro Tip: Insert the whole garnish cookies into the dessert right before serving so they stay wonderfully crisp!

Notes
Instead of assembling individual dessert glasses, you can easily build this in one large trifle dish or serving bowl. It's even faster that way!
