My Best Tips for Making This Soup
Chop your veggies evenly so everything cooks at the same rate.
Don’t be afraid of the curry paste! Start with a smaller amount first—you can always add more to kick up the heat if it’s too mild for you.
Grate your ginger and garlic finely to unlock maximum flavor.
Keep an eye on the clock and don’t simmer the soup too long, or the noodles will turn mushy.
For an extra layer of flavor, sauté the veggies in a separate skillet before tossing them into the soup.

What You’ll Need for This Thai Coconut Soup
- 1 garlic clove
- 1 small piece fresh ginger (10–20 g)
- 10 g coconut oil
- 10 g vegetable bouillon paste
- 20 g red curry paste (adjust to taste depending on your heat preference)
- 2 carrots
- 150 g button or cremini mushrooms
- 500 g water
- 400 g coconut milk
- 100 g flat rice noodles
- Juice of ½ lime
- 30 g baby spinach
For Topping & Garnish:
- 2 green onions, sliced
- 1 fresh chili pepper, sliced

How to Make Thai Coconut Soup
Prep Work:
Peel the garlic and ginger. Peel the carrots and thinly slice them on a diagonal. Clean the mushrooms, trim off the stem ends, and quarter them.
Rinse the spinach and spin it dry in a salad spinner.
Step-by-Step Instructions:
Add the garlic and ginger to the mixing bowl. Chop 3 sec / speed 8, scrape down the sides of the bowl with the spatula, and repeat if needed.
Next, add the coconut oil, vegetable stock paste, and red curry paste. Sauté without the measuring cup for 2 min / 120°C / speed 1.
Add the carrots and mushrooms, then sauté for 2 min / 120°C / reverse / speed 1.
Next, pour in the water and coconut milk. Cook the soup without the measuring cup for 12 min / 100°C / reverse / speed 1, placing the simmering basket on top of the lid to prevent splashes.
Once cooked, stir in the juice of half a lime and add the flat rice noodles to the mixing bowl.
Use your spatula to gently push the noodles down into the soup, then cook for 6 min / 100°C / reverse / gentle stir mode until cooked through.
Finally, stir in the spinach and let it wilt for 2 min / 100°C / reverse / gentle stir mode.
Ladle into bowls and top with sliced green onions and fresh chilis.
Tips for a Milder Version:
Curry paste: Cut back on the red curry paste or look for a mild variety.
Chili peppers: Skip the red chilis entirely, or just use a tiny bit for flavor.
Coconut milk: Swap out part of the coconut milk for chicken broth for a lighter, milder flavor.
