Zubereitung
1 Garlic clove, 1 piece Piece of fresh ginger
Add garlic and ginger to the mixing bowl. Chop 3 sec / speed 8, scrape down the sides with the spatula, and repeat if needed.
10 g Coconut oil, 10 g Vegetable bouillon paste, 20 g Red curry paste
Add coconut oil, vegetable bouillon paste, and red curry paste, then sauté without the measuring cup 2 min / 120 °C / speed 1.
2 Carrots, 150 g Button mushrooms
Add carrots and mushrooms, and sauté 2 min / 120 °C / reverse / speed 1.
500 g Water, 400 g Coconut milk
Add water and coconut milk. Cook the soup without the measuring cup for 12 min / 100 °C / reverse / speed 1, placing the simmering basket on top of the lid to prevent splatters.
½ Lime, 100 g Flat rice noodles
Once the cooking time is up, add the fresh lime juice and flat rice noodles to the mixing bowl. Use the spatula to gently push the noodles down into the liquid, then cook 6 min / 100 °C / reverse / gentle stir setting.
30 g Baby spinach
Finally, stir in the baby spinach and let it wilt for 2 min / 100 °C / reverse / gentle stir setting.
2 Scallions, 1 Fresh red chili
Ladle into bowls and top with sliced scallions and fresh chili.

Notes
Tips for a milder version:
Curry paste: Reduce the amount of red curry paste or use a mild brand.
Chili peppers: Leave out the red chilies or use just a tiny pinch. Coconut milk: For a milder flavor, you can swap out part of the coconut milk for chicken broth.
Variations:
Swap the spinach for bok choy.
You can easily substitute glass noodles (cellophane noodles) for the flat rice noodles.
