How to Make Lentil Bolognese

Prep Work:

Peel the onion, garlic, carrot, and celery, then chop them into rough chunks. (Pro tip: If you want an extra-smooth texture in your sauce, peel the celery stalks first to get rid of any stringy bits!)

Instructions:

Add the chopped veggies to the mixing bowl and chop for 5 sec / speed 5. Scrape down the sides of the bowl with the spatula.

Add the olive oil and tomato paste, then sauté for 5 min / 120°C (250°F) / speed 2.

Next, add the tomato purée (passata), lentils, red wine, vegetable broth, sugar, oregano, thyme, and basil. Cook for 20 min / 100°C (212°F) / Reverse mode / speed 1.

Once the cooking time is up, season to taste with salt and black pepper.

Quick Tip: Since vegetable broth already contains salt, start light and taste as you go. Begin with ½ teaspoon of salt, give it a good stir, and sample. Keep in mind that adding grated Parmesan at the end brings extra saltiness and rich flavor!

Important: Hold off on salting your lentils until after they cook. Adding salt too early can keep the lentils from softening properly, making them tough and rubbery.

While the Bolognese simmers, cook the spaghetti in a large pot of generously salted water according to the package directions.
