What You’ll Need for This Mexican Pasta Bake
- 12 oz short pasta (about 350 g)
- 1 lb ground beef (or a beef/pork blend)
- 2 bell peppers (1 yellow, 1 red)
- 1 yellow onion
- 1 garlic clove
- 1 1/2 tbsp olive oil
- 1 (14.5 oz) can diced tomatoes, drained
- 3 tbsp tomato paste
- 2/3 cup water
- 1 small can sweet corn (drained, about 5 oz)
- 1 (15 oz) can kidney beans, rinsed and drained
- 1 1/2 cups shredded cheese (such as Mexican blend, Cheddar, or Monterey Jack)
- 1 tsp smoked paprika (or sweet paprika)
- 1/2 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp chili powder
- 2 tsp salt
- 1/2 tsp black pepper

How to Make Mexican Pasta Bake
Instructions:
First, cook the pasta in a large pot of boiling salted water.
Shave about 2 to 3 minutes off the normal cooking time on the package—the pasta will finish cooking in the oven and you don’t want it to get mushy. Drain thoroughly in a colander.
Rinse the kidney beans well under running cold water and let them drain. Drain the corn.
Then, preheat your oven to 350°F (180°C).
Next, wash, core, and roughly chop the bell pepper, then add it to the mixing bowl. Chop for 2 sec / speed 5 and transfer to a bowl.
Peel and quarter the onion, and peel and halve the garlic. Add both to the mixing bowl and chop for 5 sec / speed 6. Scrape down the sides of the bowl with the spatula and repeat.
Add the oil and sauté for 3 min / 250°F (120°C) / speed 1.
Now, add the ground beef.
TM5® Version: Break up the ground beef slightly before adding it to the mixing bowl, then sauté for 5 min / Varoma® / reverse mode / speed 1.
TM6® Option: The TM6® can actually brown meat, though only when using specific guided recipes. To do this, select a recipe like “Currywurst” from your Thermomix® menu. Then add the ground beef to the mixing bowl (be sure to break it up a bit first rather than dropping it in as one solid block). Place the splash guard on top instead of the lid, and brown the beef as directed by the recipe.
Stovetop Alternative: Brown the ground beef in a skillet over medium heat until nicely crumbled, then add it to the onions in the mixing bowl and continue with the recipe.
Next, add the tomatoes, tomato paste, water, and spices, then heat for 2 min. / 100°C / Reverse / Speed 1.
Taste and add a little extra salt and pepper if needed.
Finally, transfer your cooked pasta into a baking dish.
Add the corn, kidney beans, reserved bell peppers, and the sauce mixture from the mixing bowl.
