For the Pastry Dough:

  • 1 yellow onion
  • 1 garlic clove
  • 1 bell pepper
  • 1 mild chili pepper
  • ½ tsp salt
  • 1 pinch black pepper
  • 1 tsp paprika
  • 100 g crème fraîche
  • 20 g tomato paste
  • a little fresh parsley, chopped

    • 1 egg yolk
    • splash of milk

    How to Make Ground Beef Empanadas

    Making the Dough:

    To make the dough, add all ingredients to the mixing bowl and mix for 20 sec / Speed 4, then knead for 30 sec / Dough Mode until a smooth dough forms.

    Transfer the dough to your work surface, gently press it together into a ball, wrap tightly in plastic wrap, and chill in the fridge for about 30 minutes.

    Making the Filling:

    Brown the ground beef in a skillet over medium heat, breaking it up into small crumbles as it cooks. Set aside.

    Or using the TM6:

    Select the Currywurst high-heat recipe mode on your Thermomix®. Add 10 g olive oil as prompted, followed by the ground beef.

    Be sure to break up the ground beef slightly with your hands as you add it to the bowl rather than dropping it in as one big block.

    Place the splash guard on top instead of the measuring cup and brown the meat according to the guided recipe. Transfer the cooked beef to a bowl and set aside.

    While the beef is browning, peel and quarter the onion, and peel and halve the garlic cloves.

    Seed the bell pepper and chop it into large pieces; seed the hot pepper as well and slice it into rings.
    Give the mixing bowl a quick rinse if needed, add the onion and garlic, and chop 5 sec / Speed 5.

    Scrape down the sides of the bowl with the spatula and repeat.

    Add the bell pepper and hot pepper, then chop 2 sec / Speed 5. Scrape down the sides again, add 20 g olive oil, and sauté 3 min / 120°C (250°F) / Speed 1.

    Next, add the salt, pepper, and paprika, and mix 10 sec / Speed 1.

    Transfer the mixture to the ground meat, mix well, and let it cool slightly. Be sure to drain off any excess liquid that gathers at the bottom before moving on.

    Stir together the crème fraîche, tomato paste, and chopped parsley, then fold it into the ground meat mixture until well combined.

    Assembling the Empanadas:

    Preheat your oven to 350°F convection (180°C) or 400°F conventional (200°C).

    Line a baking sheet with parchment paper.

    Take the dough out of the fridge and knead it gently by hand until smooth and pliable.

    On a lightly floured surface, roll the dough out to about 1/8-inch (3 mm) thickness and cut out 4-inch (10 cm) circles using a small bowl or cutter.

    Place a heaping teaspoon of filling in the center of each circle.

    Fold the dough over the filling to create a half-moon, pressing the edges together first with your fingers, then crimping firmly with a fork to seal.

    Gather the dough scraps, knead them together, re-roll, and cut out more circles.

    Repeat until you’ve used up all the dough.

    Arrange the empanadas on your prepared baking sheet.

    Whisk the egg yolk with a splash of milk and brush the egg wash lightly over each empanada.

    Bake on the lower oven rack for about 18 to 20 minutes until golden brown.
