For an extra soft and pillow-y texture, bread flour works amazingly well here.
Feel free to swap the butter in the filling for full-fat cream cheese for a delicious twist!

If your dough feels a little too sticky, just add extra flour one tablespoon at a time until it reaches that perfect, smooth consistency.

How to Make Cinnamon Rolls with Cream Cheese Frosting
Instructions:
First, add the softened butter, milk, yeast, sugar, and salt to the mixing bowl and warm for 3 min / 37°C (100°F) / speed 2.
Add the flour and knead for 5 min / Dough mode until a smooth, supple dough forms.
Transfer the dough to a lightly oiled bowl and let it rise in a warm spot for about 1 hour.
Once the dough has finished rising, prepare the filling.
Add the softened butter, brown sugar, and cinnamon to the rinsed mixing bowl and mix for 45 sec / speed 3.
Roll the dough out on a silicone mat or work surface into a rectangle (about 18 x 12 inches / 45 x 30 cm).
Spread the butter-sugar-cinnamon mixture evenly over the dough using an offset spatula, leaving a 1-inch (2–3 cm) border clean along the top edge.
Now, roll up the dough starting from the long side.
Next, use a piece of thread (or unflavored dental floss!) to slice the log into rolls that are about 1.5 inches (3 to 4 cm) thick (check out the video down in the recipe card!).
Using thread cuts right through the yeast dough super cleanly, giving you perfectly even, beautiful rolls every time.

Alternatively, you can just use a sharp knife to slice them up.
Place the rolls in a springform pan with a little space between them, cover, and let them rise for another 30 minutes.
Toward the end of the rising time, preheat your oven to 350°F convection (180°C).
Bake the cinnamon rolls on the lower third rack for about 15 minutes.
IMPORTANT: Cover the cinnamon rolls with a clean kitchen towel right after taking them out of the oven. This keeps them amazingly soft!
