- 3 cups (700 ml) vegetable broth
- ⅔ cup (150 ml) light cream or half-and-half
- ½ – 1 tsp salt
- Freshly cracked black pepper
- 1 pinch ground nutmeg

- 1 slice sandwich bread (or white toast)

How to Make Brussels Sprout Soup in the Thermomix®
Prep the Brussels Sprouts:
First, grab 300 g of the Brussels sprouts. Trim away any wilted outer leaves and cut off the bottom stem. Place the prepped sprouts into the mixing bowl and chop for 3 sec / Speed 5. Transfer to a separate bowl and set aside.
Make the Soup Base:
Peel the onion and garlic clove. Cut the onion in half and drop both into the mixing bowl, then chop for 5 sec / Speed 5. Use your spatula to scrape down the sides of the bowl.
Add the olive oil and sauté for 2 min / 120°C (250°F) / Speed 1.
Meanwhile, peel the potatoes and chop them into rough chunks. Add them to the sautéed onions in the mixing bowl and chop for 2 sec / Speed 5.
Pour in the vegetable broth and cook everything for 18 min / 100°C / Speed 1, until the potatoes are nice and fork-tender.
Make the Toppings in a Skillet:
While your soup is bubbling away in the Thermomix®, let’s prep those delicious toppings! Grab the remaining 3.5 oz (100 g) of Brussels sprouts and gently peel off the individual leaves (trimming the stem end first makes this a whole lot easier). Dice the white bread into small cubes.
Toast the bread cubes in a dry skillet over medium heat until golden brown and crispy, then remove them from the pan.
