What You’ll Need for This Chicken and Mushroom Quiche

For the Yeast Dough Crust:

  • 1 tsp sugar
  • 100 ml (approx. 3.5 fl oz) warm water
  • 2 tbsp oil (10 g (approx. 0.5 oz))
  • 1 tsp salt
  • 250 g (approx. 9 oz) all-purpose flour

For the Filling:

  • 400 g (approx. 14 oz) chicken tenderloins
  • 1 garlic clove
  • 1 yellow onion
  • 20 g (approx. 0.5 oz) butter
  • 1 tbsp tomato paste (20 g (approx. 0.5 oz))
  • 300 g (approx. 10.5 oz) fresh mushrooms (white button or cremini)
  • 200 g (approx. 7 oz) sour cream (or crème fraîche)
  • 100 ml (approx. 3.5 fl oz) heavy cream
  • 3 large eggs
  • Salt and freshly cracked black pepper

Topping:

  • 100 g (approx. 3.5 oz) shredded cheese
  • some fresh parsley

How to Make Chicken and Mushroom Quiche

Making the Yeast Dough:

First, crumble the yeast into the mixing bowl and add the sugar and water. Warm for 2 min / 37°C (100°F) / Speed 2.

Add the oil, salt, and flour, then knead for 4 min / Dough Mode. (Don’t worry if the dough looks pretty crumbly at first—that’s totally normal!).

Turn the dough out onto your work surface and knead it into a smooth ball. Place it in a lightly floured bowl, cover with a towel, and let it rise in a warm spot for about 45 minutes.

Pro tip: Yeast dough is super sensitive to drafts, so make sure it’s resting in a cozy, cozy-shielded spot!

While the dough rises, make the filling:

Dice the chicken tenders and sear them in a skillet with a pinch of salt and pepper until browned. Set aside.

Next, gently clean the mushrooms with a soft brush or damp paper towel, trim the stem ends, and slice them up.

Peel and quarter the onion, and peel and halve the garlic clove.

Give your mixing bowl a quick rinse.

Pop the onion and garlic into the mixing bowl and chop for 5 sec / Speed 5.

Use your spatula to scrape down the sides of the bowl, then repeat the chop one more time.

Add the butter and sauté for 3 min / 120°C (250°F) / Speed 1.

Next, add the tomato paste and sliced mushrooms. Leaving the measuring cup off, sauté for 4 min 30 sec / 100°C (210°F) / Reverse / Speed 1.

In a separate bowl, whisk together the sour cream, heavy cream, and eggs until smooth. Season generously with salt and pepper.

Assembly & Baking:

Once your dough has finished rising, preheat your oven to 200°C (400°F).

Place the dough into your quiche pan and press or roll it out, working it up the sides to create a nice crust edge.

Scatter the chicken and mushrooms evenly over the crust, then pour the smooth cream-and-egg mixture right over the top.

Sprinkle with cheese and bake on the lower oven rack for 35 minutes.

Garnish the quiche with fresh parsley and serve.

Ingredients

Instructions
 

Preparation of yeast dough:

  • 10 g (approx. 0.5 oz) Fresh yeast, 1 Tsp Sugar, 100 ml (approx. 3.5 fl oz) Water
    First crumble the yeast and add to the mixing bowl with the sugar and water. Heat 2 min. / 37° /level 2.
  • 2 Tbsp Oil, 1 Tsp Salt, 250 g (approx. 9 oz) Flour
    Add the oil, salt, and flour and knead 4 min. into a dough. (Don't be surprised, the dough is very crumbly).
  • 250 g (approx. 9 oz) Flour
    Knead the yeast dough into a ball on the work surface, place in a lightly floured bowl, cover and leave in a warm place for approx. 45 mins. Please note: Yeast dough does not tolerate draughts.

In the meantime, prepare the filling:

  • 400 g (approx. 14 oz) Chicken inner fillet, Salt and pepper
    To do this, cut the chicken inner fillet into cubes and fry in a pan with a little salt and pepper. Set aside.
  • 300 g (approx. 10.5 oz) Mushrooms
    Then clean the mushrooms with a soft brush, remove the stem ends and cut into slices.
  • 1 Garlic clove, 1 Onion
    Next, peel and quarter the onion and peel and halve the garlic clove.
  • Rinse the mixing bowl.

    Then add the onion and garlic to the mixing bowl first and chop 5 sec. / level 5. Use the spatula to push everything down from the edge of the mixing bowl and repeat the process.
  • 20 g (approx. 0.5 oz) Butter
    Add the butter and steam 3 min. / 120° / level 1.
  • 1 Tbsp Tomato paste, 300 g (approx. 10.5 oz) Mushrooms
    In the next step, add the tomato purée and mushrooms to the mixing bowl, remove the measuring cup and steam 4 min. 30 sec. / 100° / anticlockwise rotation / level 1.
  • 200 g (approx. 7 oz) Sour cream, 100 ml (approx. 3.5 fl oz) Cream, 3 Eggs, Salt and pepper
    Finally, mix the sour cream with the cream and eggs in a bowl using a whisk. Then season with salt and pepper.

Completion:

  • At the end of the cooking time, preheat the oven to 200°C (400°F) top/bottom heat.
  • Place the yeast dough in the quiche tin and roll out, pulling up the edges.
  • 400 g (approx. 14 oz) Chicken inner fillet, 300 g (approx. 10.5 oz) Mushrooms, 200 g (approx. 7 oz) Sour cream, 3 Eggs
    Then fill with the chicken and mushrooms and pour over the sour cream and egg mixture.
  • 100 g (approx. 3.5 oz) Cheese
    Sprinkle with cheese and bake in the lower third of the oven for 35 minutes.
  • some fresh parsley
    Garnish the quiche with fresh parsley and serve.

Notes

You can also use a ready-made quiche dough from the chiller cabinet if you need something quicker.
