Whenever possible, stick with bread flour for these bagels to get that perfect, classic chewy texture.

Feel free to swap out fresh yeast for active dry yeast or instant yeast.

Just make sure your yeast isn’t expired, otherwise your dough won’t get that nice, beautiful rise!

Can You Make Bagels Ahead of Time and Store Them?

You can easily prep the bagel dough ahead of time and let it do a cold rise in the fridge overnight.

Both raw bagel dough and fully baked bagels freeze beautifully, too.

Either option will stay fresh in the freezer for up to 3 months.

To use frozen bagel dough, just let it thaw in the fridge overnight.

Pre-baked bagels can be thawed right on the counter at room temperature or in the fridge.

Once they’re completely thawed, just pop them in a preheated oven for a few minutes to crisp them right back up!

  • 475 g bread flour
  • 270 g warm water
  • 20 g brown sugar
  • 15 g fresh yeast
  • 10 g salt

How to Make Bagels

Instructions:

First, add the water, yeast, sugar, and salt to the mixing bowl and warm for 2 min / 37 °C (98°F) / Speed 2.

Add the flour and knead for 5 min / Speed 1 until a smooth dough forms.

Transfer the dough to a lightly oiled bowl, cover, and let it rise in a warm spot for about 1 hour.

Once risen, divide the dough into 6 equal portions.

Shape each piece of dough into a smooth ball.

To shape them, take a portion of dough and tuck the edges toward the center a few times until the top surface is nice and smooth.

Then, gently roll the ball on your work surface to finish shaping it and place it on your baking sheet.

Cover the dough balls and let them rest for another 15 minutes.

In the meantime, bring about 8 cups (2 liters) of water and 2 tablespoons (30 g) of sugar to a boil in a large pot, and preheat your oven to 375°F (convection).

Once they’ve rested, poke a hole right through the center of each dough ball using your finger or the handle of a wooden spoon. Gently twirl the handle in a circular motion on a lightly floured surface to widen the hole.

Use your fingers to stretch the hole out just a bit more.

Drop the shaped bagels into the gently boiling water, cooking them for about 30 seconds per side.

Transfer them to a clean kitchen towel or paper towels and gently pat them dry.

Sprinkle your bagels with your favorite toppings—think sesame seeds, poppy seeds, pumpkin seeds, or sunflower seeds!

Pop them in the oven and bake for 18–22 minutes, until golden brown.
