What You’ll Need to Make Marble Cake

  • For the batter (yields about 12 slices):
  • 5 medium eggs (room temperature)
  • 250 g butter, cubed
  • 125 g + 100 g sugar
  • 1 packet vanilla sugar (or 1 tsp vanilla extract)
  • 200 g all-purpose flour
  • 1 packet baking powder (approx. 1 tbsp)
  • 1 pinch of salt
  • 2 tsp unsweetened cocoa powder

For Topping:

Powdered sugar or 100 g melted chocolate for the glaze

How to Make Classic Marble Cake

Instructions:

Pro Tip: Measure out all your ingredients before you get started!

Grease a loaf pan (about 10 x 4 inches) or line it with parchment paper.

Pro Tip: Wet your parchment paper with warm water and wring it out! It makes it super pliable so it fits perfectly into the pan without slipping around.

Insert the butterfly whisk into the mixing bowl.

Separate the eggs and add the egg whites and a pinch of salt to the mixing bowl. Set to 5 min / speed 3.5.

After about 1 minute, slowly stream 100g of sugar through the hole in the lid.

Transfer the whipped egg whites to a separate bowl and give the mixing bowl a quick rinse. (Remove the butterfly whisk.)

Preheat your oven to 350°F (180°C).

Add the cubed butter to the mixing bowl and beat for 1 min / speed 4 until creamy.

Add 125g sugar and the vanilla sugar, then mix for 45 sec / speed 5.

Set to 1.5 min / speed 5 and gradually add the egg yolks through the hole in the lid. Use your spatula to scrape down the sides of the bowl.

Mix the flour and baking powder together, then sift into the mixing bowl. Fold together for 15 sec / speed 5.

Transfer the batter to a large mixing bowl, add the whipped egg whites, and gently fold them in using a spatula.

Pour roughly 2/3 of the batter into your prepared loaf pan and smooth out the top.

Mix the unsweetened cocoa powder into the remaining 1/3 of the batter.

Spoon the chocolate batter right on top of the plain batter.

To get that gorgeous classic marble swirl, take a large fork and gently swirl it through the batter in a spiral motion from one end of the pan to the other.

Smooth out the top one last time.

Bake the marble cake on the wire rack in the lower third of your oven for 50–60 minutes.

Baker’s Note: Mine was done right at 50 minutes, but since every oven bakes a little differently, I recommend doing a toothpick test near the end. Just insert a toothpick into the center of the cake—if it comes out clean, your cake is ready! If there’s still wet batter clinging to it, give it a few more minutes.

Let the cake cool completely after baking. Then, remove it from the pan and dust it with powdered sugar or coat it with melted chocolate.
