Instructions:
First, peel and quarter the onion. Add it to the mixing bowl and chop for 3 sec / Speed 6. Scrape down the sides of the bowl with the spatula and repeat.
Next, add the butter and sauté for 3 min / 250°F (120°C) / Speed 2.
Meanwhile, wash and cut the pumpkin in half. Scoop out the seeds and cut the flesh into rough cubes.
Pro Tip: Hokkaido pumpkins (Red Kuri squash) don’t need to be peeled! Just trim off any extra tough or woody spots on the skin, scoop out the seeds, and you’re good to go.
