My Top Baking Tips
Always use cold butter for the streusel—that’s the real secret to getting those perfectly golden, buttery crisp crumbs!
Feel free to jazz up the crumb topping with your favorite spices, like cinnamon, vanilla extract, or even a pinch of tonka bean.
Not a fan of plums? No problem! Swap them out for apples, cherries, apricots, or whatever fruit is currently in season.
Keep an eye on your oven and be careful not to overbake, or the cake layer beneath the fruit might dry out.
This streusel cake is best enjoyed warm out of the oven with a fresh cup of coffee or tea.

Can I Make This Ahead and Store It?
Yes, you can easily make this crumb cake a day ahead! Just store it in an airtight container in the fridge until you’re ready to serve.
This cake also freezes beautifully. Wrap individual pieces tightly in aluminum foil or seal them in a freezer bag, and you’re good to go.
Fun Recipe Variations
Feel free to customize this fruit crumb cake recipe to make it your own!
Try swapping in different seasonal fruits, or add warm spices like cinnamon and nutmeg to the crumble topping for an extra cozy flavor.
Serving Suggestions
This cake is fantastic on its own, but it’s over-the-top delicious served with fresh whipped cream, a scoop of vanilla ice cream, or a light dusting of powdered sugar.

Ingredients You’ll Need
For the Streusel:
- 250 g cold butter, cubed
- 120 g sugar
- 1 large egg
- 420 g all-purpose flour
- ½ packet baking powder (about 2 tsp)
For the Fruit Layer:
- 800 g plums (or your favorite fruit)
- 2 large eggs
- 50 g sugar
- 25 g all-purpose flour
- ½ packet baking powder (about 2 tsp)

How to Make Fruit Crumb Cake
Instructions:
First, wash and pit the plums, then slice them into wedges.
Next, preheat your oven to 350°F / 180°C (conventional) or 325°F / 160°C (convection).
To make the crumble, start by adding the cold, cubed butter into the mixing bowl.
Add the rest of the crumble ingredients. Mix for 10–15 sec / speed 6 until crumbs form (depending on whether you prefer finer or chunkier crumbs).
Line a small baking sheet or dish, about 8 x 12 inches (30 cm x 20 cm), with parchment paper.
Spread two-thirds of the crumble mixture into the pan and press it down firmly with your hands to form the crust.
Arrange the plum slices evenly over the crust.
Now, make the glaze. Place all remaining ingredients into the mixing bowl, mix for 10 sec / speed 4, and pour it evenly over the plums.
Finally, scatter the remaining streusel over the cake and bake on the rack in the lower third of your oven for 40-45 minutes.
Enjoy!

By the way, the prep times listed are just averages. Everyone cooks at their own pace, and sometimes things take a bit longer or shorter than expected.
I hope you have so much fun baking this!
