Short on time? Feel free to buy pre-marinated pork strips from the butcher counter to skip the marinating step altogether.
If you’re marinating it yourself, let the meat sit in the fridge for at least an hour so all those delicious spices can soak in.

What You’ll Need for Gyros in Metaxa Sauce
For the Gyros:
- Pork or turkey cutlets (sliced into strips)
- Garlic cloves
- Onion
- Olive oil
- Gyro seasoning blend
- Salt
- Paprika
For the Sauce:
- Onion
- Olive oil
- Water
- Beef or vegetable broth (or bouillon paste)
- Tomato paste
- Sour cream (or Mexican crema)
- Metaxa (Greek brandy)
You’ll also need:
- Bell peppers (red and yellow)
- Shredded cheese




How to Make Gyros in Metaxa Sauce
Marinate the Pork:
Pat the pork cutlets dry with a paper towel, slice them into thin strips, and place them in a bowl.
Peel the garlic cloves, add them to the mixing bowl, and chop 3 sec / speed 8.
Peel and quarter the onion, then add it to the mixing bowl. Chop 3 sec / speed 5. Scrape down the sides of the bowl with the spatula.
Add the oil, gyro seasoning, salt, and paprika, then mix 4 sec / speed 3.
Pour the mixture over the meat, toss to combine, cover, and let it marinate in the fridge for 1 hour.
Make the Sauce:
Halve the onion and chop 6 sec / speed 5. Add the oil and sauté 3 min / 120°C (250°F) / speed 2.
Add the water, beef or vegetable bouillon cube, tomato paste, Metaxa, sour cream, cornstarch, and spices. Cook 10 min / 100°C (212°F) / speed 2.
In the meantime, wash and pat the bell pepper dry, seed it, and cut it into bite-sized strips.
Assemble and Bake:
Preheat your oven to 425°F (220°C).
Transfer the marinated gyro meat and bell pepper strips into a baking dish.
Pour the sauce right over the top and give everything a good stir to combine.
Cover with a lid (or foil) and bake for 1 hour. About 15 minutes before the time is up, remove the dish from the oven, top generously with shredded cheese, and bake uncovered until the cheese is melted, bubbly, and beautifully golden brown.
