Pat the cutlets dry with a paper towel, slice into thin strips, and place them in a bowl.
2 Garlic cloves
Peel the garlic cloves, add them to the mixing bowl, and chop for 3 sec / Speed 8.
1 Onion
Peel and quarter the onion, then add it to the mixing bowl. Chop for 3 sec / Speed 5. Scrape down the sides of the bowl with the spatula.
30 g Olive oil, 3 tbsp Gyros seasoning, ½ tsp Salt, 1 tsp Paprika
Add the oil, gyros seasoning, salt, and paprika, then mix for 4 sec / Speed 3.
Pour the mixture over the meat, toss well to coat, cover, and let marinate in the fridge for 1 hour.
Make the sauce:
1 Onion, 20 g Olive oil
Halve the onion and chop for 6 sec / Speed 5. Add the oil and sauté for 3 min / 120 °C / Speed 2.
400 g Water, 1 cube Beef or vegetable broth, 80 g Tomato paste, 400 g Sour cream, 50 g Metaxa, 1 tsp Salt, 1 tsp Black pepper, 1 tsp Paprika, 1 tbsp Cornstarch
Add the water, beef or vegetable bouillon cube, tomato paste, Metaxa, sour cream, cornstarch, and spices. Bring to a boil for 10 min / 100 °C / Speed 2.
2 Bell peppers
Meanwhile, wash and dry the bell peppers, remove the seeds, and cut into bite-sized strips.
Bake:
Preheat your oven to 220 °C (top/bottom heat).
150 g Shredded cheese
Transfer the marinated gyros meat and bell peppers to a casserole dish. Pour the sauce over top and stir everything together well. Cover with a lid and bake for 1 hour. About 15 minutes before it's done, carefully remove the casserole from the oven, sprinkle generously with shredded cheese, and finish baking uncovered until the cheese is bubbly, melted, and golden brown.
Notes
This pairs wonderfully with rice, pasta, or roasted potatoes.
