  • 2 3/4 cups (350 g) all-purpose flour
  • 1 packet (approx. 1 tbsp) baking powder
  • 1 tbsp salt
  • 2 pinches black pepper
  • 1 tbsp Italian seasoning (or pizza seasoning)

How to Make Veggie Quiche

Instructions:

First, give the zucchini, red bell pepper, and mushrooms a good rinse. Peel the onions, then chop all the veggies into rough chunks.

Preheat your oven to 375°F (190°C fan). Line a baking sheet (about 12 × 16 inches) with parchment paper.

Add the chopped zucchini, onions, bell pepper, and mushrooms to the mixing bowl. Chop for 5 sec / speed 5.

Transfer the chopped veggies to a large mixing bowl. Toss in the shredded pizza cheese and mix everything together well.

Next, add the remaining ingredients—the eggs, milk, flour, baking powder, salt, pepper, and pizza seasoning—to the mixing bowl.

Mix for 10 sec / speed 5 until you have a smooth batter.

Pour the batter over the veggie and cheese mixture in the bowl, stirring thoroughly to combine.

Spread the mixture evenly onto your prepared baking sheet.

Bake the quiche in the preheated oven for 25 to 30 minutes.

Once baked, slice it into squares. It’s delicious served warm right out of the oven, or you can enjoy it cold later!
