My Best Cooking Tips

The cooking time here is based on salmon fillets that are around 5.5 ounces (160 g) each. If your fillets are on the thicker side, just add about 5 extra minutes to the Varoma® steaming time to make sure the fish cooks all the way through.

Feel free to mix and match your veggies! If you have leeks, bell peppers, or zucchini hanging out in the fridge, go ahead and toss them in with the carrot and celery mix. Just be sure to chop everything into uniformly sized pieces so it all cooks evenly.

Want an extra layer of flavor? Add a tiny pinch of ground nutmeg to the vegetables before steaming. Tucking a small sprig of fresh rosemary or thyme right inside each salmon packet also works absolute wonders!

When you tie up your parchment packets with kitchen twine, twist and secure the ends like a little candy wrapper. This traps the steam inside and keeps all those delicious juices and aromas locked in while it cooks.

Mix up the veggies: Feel free to swap in seasonal vegetables! Anything that cooks at a similar rate to celery root and carrots will work beautifully in this recipe.

  • 2 salmon fillets (about 5.5 oz / 160 g each)

  • 1 lb Yukon Gold or yellow potatoes (approx. 500 g)
  • 1 yellow onion
  • 1 tbsp cooking oil (approx. 15 g)
  • 1 small celery root / celeriac (about 10 oz / 300 g)
  • 4–5 carrots (about 14 oz / 400 g)
  • 1 tsp salt + 1 tsp salt for the cooking water
  • 2 pinches freshly ground black pepper
  • 2.5 cups water (600 g)
  • Fresh parsley for garnish (optional)

How to Make Salmon & Vegetable Parchment Packets

Instructions:

Peel the potatoes and dice them into uniform cubes. Peel the onion, celery, and carrots. Quarter the onion, and chop the celery and carrots into rough chunks.

Add the onion to the mixing bowl and chop for 5 sec / speed 5. Scrape down the sides of the bowl with the spatula. Add the oil and sauté for 3 min / 120°C / speed 1.

Add the celery and carrot chunks, then chop for 15 sec / speed 6. Add 1 tsp salt and a pinch of black pepper, then mix for 10 sec / reverse / speed 4. Transfer the vegetable mixture to a bowl and set aside.

Cut a sheet of parchment paper in half lengthwise. Place a salmon filet in the center of each piece, drizzle with fresh lemon juice, top with 2–3 tbsp of the vegetable mixture, and add a small pat of butter (about 1 tsp). Gather the ends and tie them with kitchen twine so they look like cute little candy wrappers.

Pour 600 g water and 1 tsp salt into the mixing bowl. Insert the simmering basket with the diced potatoes. Place the salmon packets into the Varoma dish, and spread the rest of the vegetable mixture onto the tray insert.

Set the Varoma® in place on top of the mixing bowl and steam for 35 min / Varoma® / speed 2.

Remove the Varoma®, carefully lift out the simmering basket, and plate everything up. Garnish the fish with fresh parsley if you’d like!

  • Carefully remove the Varoma® when the steaming time is up. Use your spatula to lift out the simmering basket with the potatoes.
  • Fresh parsley
