Let the chopped mixture of potatoes and onions drain thoroughly in a colander, and squeeze out the liquid so the meatball mixture doesn’t get too wet.

The white bread must be squeezed out thoroughly before adding it to the mixing bowl. If there is still too much water in the bread, the meatballs will fall apart easily later in the pan.

Lightly moisten your hands before shaping the meat. This prevents the ground meat mixture from sticking to your fingers and helps you form nice, even portions.

Heat the oil in the pan well before adding the meatballs. This will help them form a nice crust quickly and prevent them from soaking up too much fat.

Storage options

Yes, that works really well. Meatballs are a true classic when it comes to preparing in advance and storing.

After frying them, you can simply let them cool and store them in the refrigerator, well covered, for one to two days.

To reheat them, just pop them back in the pan for a moment or heat them up in the microwave. They still taste great cold on a slice of bread the next day, too.

Alternative bread: If you don’t have any light white bread at home, this recipe works just as well with stale rolls or yesterday’s toast.

Type of meat: Instead of mixed ground meat, you can, of course, use pure ground beef for this recipe. The meatballs will then have an even richer flavor.

  • 2 onions (about 100 g)
  • 250 g stale white bread (or, alternatively, toast or rolls from the day before)
  • 250 g potatoes (peeled and diced)
  • 1 teaspoon salt, heaping
  • 1 teaspoon pepper

Here’s How to Make Meatballs

Preparation:

First, soak the white bread in warm water and let it absorb all the water.

Peel the onions and cut them in half. Peel the potatoes and cut them into large chunks. Put both into the mixing bowl and chop them up 4 sec. / Level 6 . Use the spatula to push everything from the edge down toward the center, and chop it up again if necessary 2 sec. / Level 6 , until everything is finely chopped.

Place the chopped onion-potato mixture in a colander and let it drain thoroughly. Gently squeeze out any excess liquid.

Next, add the ground meat, salt, and pepper to the mixing bowl. Squeeze the soaked white bread well and add it, too. Add the drained potato-onion mixture as well.

Mix everything together roughly with the spatula. Then let the mixture 1 min. / Kneading stage Mix until all the ingredients are well combined. The mixture should now be smooth and hold together well.

Shape the ground meat mixture into about 25 meatballs of equal size. You can lightly moisten your hands so the mixture doesn’t stick as much.

Now heat the oil in a large skillet over high heat. There should be enough oil so that the meatballs are about halfway submerged. Fry the meatballs one at a time in the hot pan until they’re golden brown and cooked through on each side. This takes about 4–6 minutes per side, depending on the thickness of the meatballs.

Place the cooked meatballs on paper towels to drain off any excess fat. Serve them immediately.

Ingredients
  

Zutaten

  • 500 g gemischtes Hackfleisch
  • 2 Zwiebeln ca. 100 g
  • 250 g altbackenes Weißbrot alternativ Toastbrot oder Brötchen vom Vortag
  • 250 g Kartoffeln geschält und gewürfelt
  • 1 TL Salz gehäuft
  • 1 TL Pfeffer

Außerdem

  • Öl zum Ausbacken

Instructions
 

  • 250 g altbackenes Weißbrot
    Zuerst das Weißbrot in warmes Wasser geben und vollständig vollsaugen lassen.
  • 2 Zwiebeln, 250 g Kartoffeln
    Die Zwiebeln schälen und halbieren. Die Kartoffeln schälen und in grobe Stücke schneiden. Beides in den Mixtopf geben und 4 Sek. / Stufe 6 zerkleinern. Mit dem Spatel alles vom Rand nach unten schieben und eventuell noch einmal 2 Sek. / Stufe 6 zerkleinern, bis alles fein gehackt ist.
  • 2 Zwiebeln, 250 g Kartoffeln
    Die zerkleinerte Zwiebel-Kartoffel-Mischung in ein Sieb geben und gut abtropfen lassen. Drücke eventuell überschüssige Flüssigkeit vorsichtig aus.
  • 500 g gemischtes Hackfleisch, 2 Zwiebeln, 250 g altbackenes Weißbrot, 250 g Kartoffeln, 1 TL Salz, 1 TL Pfeffer
    Als Nächstes das Hackfleisch, Salz und Pfeffer in den Mixtopf geben. Das eingeweichte Weißbrot gut ausdrücken und ebenfalls hinzufügen. Die abgetropfte Kartoffel-Zwiebel-Masse auch dazugeben.
  • Mit dem Spatel einmal grob vermischen, dann die Masse 1 Min. / Knetstufe mischen lassen, bis alle Zutaten gut miteinander verbunden sind. Die Masse sollte nun homogen sein und gut zusammenhalten.
  • Die Hackfleischmasse zu etwa 25 gleich großen Frikadellen formen. Du kannst deine Hände leicht anfeuchten, damit die Masse nicht so klebt.
  • Öl
    Jetzt das Öl in einer großen Pfanne bei hoher Hitze erhitzen. Es sollte so viel Öl sein, dass die Frikadellen etwa zur Hälfte darin schwimmen. Die Frikadellen nacheinander in der heißen Pfanne von jeder Seite goldbraun und gar ausbacken. Das dauert pro Seite etwa 4-6 Minuten, je nach Dicke der Frikadellen.
  • Die fertig ausgebackenen Frikadellen auf Küchenkrepp legen, um überschüssiges Fett abtropfen zu lassen. Anschließend sofort servieren.
