I don’t recommend freezing it, though—the texture won’t hold up well after thawing.

- 1 packet vanilla sugar (or 1 tsp vanilla extract)
For the Apple Compote:
- 5 apples, peeled and cored (about 1.1 lbs / 500 g)
- 30 g brown sugar
- 3 tbsp fresh lemon juice
- 1 tbsp cornstarch or ½ packet vanilla pudding mix (+ 2 tbsp water)
For the Cinnamon Cream:
- 200 ml heavy whipping cream
- 250 g low-fat quark (or Greek yogurt)
- 50 g granulated sugar
- 1 tsp ground cinnamon
- 1 tsp vanilla extract or 1 packet vanilla sugar

How to Make Apple Quark Streusel Parfaits
First, Make the Streusel Topping:
Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
Next, add all of the streusel ingredients to the mixing bowl and mix for 10 sec / Speed 5.
Spread the crumble mixture onto your prepared baking sheet and bake for 15–20 minutes, or until golden brown and beautifully crisp.
Let the streusel cool completely, then crumble them into smaller bites if you like.
Pro-Tip: If you’re making these ahead of time, store the cooled streusel in an airtight container to keep them nice and crunchy!
For the Apple Compote:
Peel, core, and dice the apples. Transfer them to the mixing bowl.
Whisk the vanilla pudding mix (or cornstarch) into the water, then add it to the bowl along with the remaining ingredients for the apple compote. Cook for 7 min / 100°C (212°F) / Reverse / Speed 1 until soft, then transfer to a separate bowl and let cool.
For the Cinnamon Cream:
Pro Tip: Make sure your heavy cream and mixing bowl are super cold. If you can, pop the mixing bowl into the freezer for a few minutes first. Otherwise, just rinse it with ice-cold water!
Add the heavy cream, sugar, cinnamon, and vanilla extract to the mixing bowl. Whip for 20 sec / Speed 10 until stiff, or until you hear the blades spinning freely.
Add the quark to a separate bowl, add the whipped cream, and gently fold them together using a rubber spatula.
Assembling the Dessert:
Start by adding a layer of streusel crumbs to the bottom of your dessert glasses.
Next, spoon in a layer of the cinnamon cream, followed by a layer of the apple compote.
Finish with another crunchy layer of streusel right on top. Chill the glasses in the fridge until you’re ready to serve.
