For the Cinnamon Cream:
200mlHeavy whipping cream
250gLow-fat quarkor plain Greek yogurt
50gGranulated sugar
1tspGround cinnamon
1tspVanilla extract or 1 packet vanilla sugar
Zubereitung
First, make the streusel:
Preheat your oven to 180 °C (conventional) and line a baking sheet with parchment paper.
100 g Cold butter, 150 g All-purpose flour, 70 g Ground almonds, 80 g Brown sugar, 1 pinch Salt, 1 Vanilla sugar
Add all of the streusel ingredients to the mixing bowl and blend for 10 sec / Speed 5.
Spread the streusel mixture onto your prepared baking sheet and bake for 15-20 minutes until golden brown and perfectly crispy.
Let cool completely, then crumble into smaller pieces if desired.
Pro-Tip: If you're making these ahead of time, store the fully cooled streusel in an airtight container to keep them super crunchy!
For the Apple Compote:
5 Apples, 30 g Brown sugar, 1 tbsp Cornstarch or ½ packet vanilla pudding mix, 3 tbsp Lemon juice
Peel, core, and dice the apples, then toss them into the mixing bowl. Mix the vanilla pudding powder (or cornstarch) with the water in a small bowl, then add it to the mixing bowl along with the remaining compote ingredients. Cook for 7 min / 100 °C / Reverse / Speed 1 until tender. Transfer to a bowl and let cool.
For the Cinnamon Cream:
Pro-Tip: Make sure your heavy cream and mixing bowl are ice-cold! If you can, pop the mixing bowl in the freezer for a few minutes beforehand, or rinse it thoroughly with cold water.
200 ml Heavy whipping cream, 50 g Granulated sugar, 1 tsp Ground cinnamon, 1 tsp Vanilla extract or 1 packet vanilla sugar, 250 g Low-fat quark
Add the heavy cream, sugar, cinnamon, and vanilla extract to the mixing bowl and whip until stiff peaks form—about 20 sec / Speed 10 (or until you hear the blades spinning freely). Transfer the quark to a separate medium bowl, add the whipped cream, and gently fold everything together with a rubber spatula.
Layer the Desserts:
Start by adding a generous layer of crisp streusel to the bottom of your dessert glasses. Pipe or spoon in a layer of cinnamon cream, followed by a layer of cooked apple compote. Finish with another layer of crunchy streusel on top. Chill in the fridge until you're ready to serve!
